Hot Apple Cider

Just made this at Thanksgiving this year and it was WONDERFUL! I saw that others had said it was a little too sweet with all of the syrup, so I used the 1/4 cup syrup with a gallon of unsweetened apple cider, and it was perfect. I also let it simmer on the stove for an hour and then removed the fruit and spices. Everyone raved about it and wanted the recipe.

Oven Chicken Fingers

I have the 2 pickiest kids in the world. Especially my youngest who won't eat any chicken fingers except Tyson. But I wanted to try something healthier, so I made these tonight. They both LOVED them! YAY! I made them even easier by just using Panko italian seasoned bread crumbs, and dipped the chicken into egg whites with a little garlic powder to make the bread crumbs stick. Baked on a foil lined (sprayed with Pam) cookie sheet for 10 minutes per side, then under the broiler for 2 minutes to brown them a little more. Was so excited to have made something the kids liked - that's very rare. Thanks for the great recipe - even though I modified it.

Slow-Cooker Chicken Tortilla Soup

I used the suggestions of others and put in 3 frozen chicken breasts that I shredded after they cooked. I used 15 oz rotel diced tomatoes with green chilis instead of the whole tomatoes, and also added black beans (drained and rinsed). Added about 1/2 packet of taco seasoning as well. And we LOVED it - I will definitely make this again - very easy and very tasty!

Chef John's Banana Bread

just some small changes - increased vanilla to 1/2 tsp, added 1/2 tsp cinnamon and 1/4 tsp nutmeg, and it was PERFECT. Best Banana Bread I've ever made, and I've tried soooo many recipes. I loved the choc chips in it, too. This one goes in my permanent recipe box. Now I'm going to have to buy bananas and make sure nobody eats them, specifically so they become over-ripe and I can make more of this banana bread. My whole family wants MORE and I'm out of bananas.

Janet's Rich Banana Bread

I have tried a LOT of banana bread recipes and everyone has agreed this is the best. I mashed the bananas and I also added 1 tsp of cinnamon and 1/4 tsp nutmeg. I think it's the sour cream that really makes it so good. I made muffins from this recipe, and made a little crumbly topping of brown sugar, flour, cinnamon and butter. Baked for 30 minutes and they came out perfectly!
