Dinner in a Pumpkin I

I gave this 4 stars because I too tweaked the recipe. I followed suggestions and did not use as much tomato juice. I used one can of Tomato Sauce, 1 Can Diced Tomatoes w/ Basil & Oregano, and a splash of tomato juice to make sure there was enough moisture. I didn't have Italian seasoning, so I threw in a 1/2 teaspoon of Oregano, Thyme, Basil & Garlic Powder. I also used 2 4lb pumpkins, and it took about 2 1/2 hours to make. Everyone loved to recipe, and we will definitely make this a Halloween Tradition!

Super Filling Cannellini Bean and Escarole Dish

My entire family ate this meal and it was super easy. I didn't have frozen spinach, or canned tomatoes...so I diced up one whole tomato and sauteed some mushrooms with the chicken. That's the only difference and it was delicious!! Will definitely make again.

Collard-Kielbasa Soup

Just want to add that you don't need a lot of salt as the Kielbasa and Bacon add enough. I added some before tasting, and it didn't need the extra salt. Also, I only used one can of beans, and fresh collards..it came out delicious! The green peppers ads a nice flavor too!

Beet Bundt Cake

This cake has such an earthy yet delicious flavor...I loved it. A little time consuming, but if you can get over the prep of the beets, its well worth it!

Black Beans a la Olla

This dish is amazing..we served it as a component for fajitas which just included chicken, rice and cheese along with this....it is sooo good. I decreased the pepper a little, with little ones in the house, but everything else was the same..delicious!

Beef and Spinach Curry

Our entire family liked this recipe..even the 3 and 1 year old! I used a flank steak b/c that's what I had, as well as using a can of diced tomatoes. We skipped the chili's too, and my husband just used some curry paste that we had to spice it up for him, so we all won out! Will definitely make again. Prepared with rice. I will try Naan next time like another user said.

Best Lemonade Ever

I decreased the sugar to about 3/4's, and I had some people tell me it wasn't sweet enough, and some told me it was too sweet. Still trying to find the happy medium, but I do like the aspect of making a simple syrup to add to the lemonade rather than adding sugar.

Stuffed Peppers

Coconut Macaroons III

I like this recipe, very easy. I wish there was another recipe that was more healthy than using Condensed Sweetened milk. I am still looking for the all natural recipe with honey, egg whites and coconut. Anyone know it?

I really enjoyed the flavor of this recipe. I had a very difficult time getting the rice to ball up. I had to cake on the flour just to handle them. Perhaps I cut the ham to large, I am not sure. But the flavors are great! Thanks!
