Artichoke Spinach Lasagna

Made this "pot style" by using pre-cooked mac noodles. After adding the pasta sauce (step 3), I let this simmer for 20 mins. Added mac noodles and some mozzarella and cotija cheeses. Let them blend/warm and served with a bit more cheese on top. Fantastic and so easy!

Chicken with Chipotle

I used three chicken breasts, chopped and baked for 30 mins, then added them to the pan with sauce, and reduced. Two medium chipotle peppers were plenty for my family... (They sweat with ketchup, lol!) However, for me I could have added a couple more. So good, even better day 2.

Spaghetti Squash I

Third time making this - Love it! Fresh garden tomatoes & basil are a must. If you want to shorten the cooking time and zing it up a bit, cut squash in quarters, place in a mircrowave safe dish, add 3/8" of water to the bottom. Lay a couple julienned strips of red pepper on each quarter along with a small pat of butter or drizzle with olive oil. Cover dish with plastic wrap to seal. Microwave for 8-10 mins. Saute onions and garlic (with additional red pepper if you want). I like mine chopped, almost minced. Turn off heat and add tomatoes, gently mixing. Add basil. Finish recipe as written by James. (As I'm a feta-fan, I add over a cup. ) For fun, save the quarter shells and place the mixings back inside, like twice-baked potatoes, to serve. Top with julienned red pepper and julienned basil.

Salmon Chowder

Didn't change a thing. Served with a small sprig of dill and some McCormick Smokehouse ground pepper on top. Even the non-fish eaters gobbled it up. Oh! And this recipe is SO quick and easy!

No-Noodle Lasagna

This recipe is missing ingredients like water and garlic. Other than adding 2-3 cups of water, I made this recipe exactly as written. Everyone took a bite, but that was it. Not a good reaction. Upon retrieving their dinner plates and being desperate, I melted some butter, mixing in garlic salt, onion powder and a little tobasco, then slathered it on the top and re-served. Poof, they ate it all. Without changes, this recipe is bland and not worth the effort.

Garden Fresh Tomato Soup

Delicious. I doubled the whole cloves and added some heavy cream. I also quadrupled the recipe to have enough to save several servings in the freezer. This soup reheats well and tastes amazing. It has become a family favorite. UPDATE: I keep seeing reviews claiming this is made with cloves of garlic, not whole cloves. I've now made it three ways. With whole cloves, with garlic cloves, and with both. I strongly believe this recipe is meant to be made with whole cloves. (The little brown spikey ones.) Adding some garlic isn't a bad way to go, and we are garlic lovers. However, be cautious as it could easily overpower the delicacy of the tomato. Using just the whole cloves gives it a tweak of sweet tang. I can't describe it any better. It is just wonderful! Adding both gives it a more Italian flavor. Just adding garlic and not the whole cloves is ok, but not as tasty. It's almost as though something is missing, but is still flavorful.

Six Can Chicken Tortilla Soup

Wow! Outstanding! Drained my beans but didn't rinse, added 1t cilantro, 1t Cholula Chili Garlic seaoning, 1t cumin, 1t chili powder. Used boulion paste with half milk and half water in place of broth. Broke up tortilla chips and added on top with a dollop of sour cream. Didn't add any cheese. Can't wait to make this again!

Filipino Lumpia

Outstanding! I added grated jicama and bean sprouts, and used a bigger dash of worst. I doubled the recipe and made about 25 quarter-sized rolls. A note about spring roll wrappers: Buy them as fresh as possible, or keep them frozen until 30 mins before use. Also, once opened, make sure you keep them covered with a very damp towel. They will be much easier to work with. UPDATE: Second round of lumpia and I was out of garlic powder so I used california blend garlic salt, omitting other salt. Also used tube sausage. Wow! This recipe POPS!

Dad's Spaghetti Western

The adults loved it, the kids not so much. They didn't like beans with their noodles. I think it was the texture rather than the taste. This is a creative recipe and worth trying.

Chili Dog Casserole II

A new favorite in our house! Kids and hubby were thrilled! I sliced the dogs lengthwise and put both slices staggered inside the tortilla. This way every bite had some meat. Quick and easy!

Sweet and Spicy Pumpkin Seeds

After spending the day trying various pumpkin seed recipes (6 total), this is by far the best! I was leary of this recipe being too "hot" for my children, but No! They love it! Even more so than the cinnamon and sugar recipes. It's not too salty, and not too sweet. I used basic Tabasco Sauce. (Would add more dashes of sauce for adults.) Outstanding!

Bake Sale Lemon Bars

Used straight-out-of-the-chicken eggs, so no need for the food coloring. Used 3/4 cup lemon and 1/4 cup lime juice and increased sugar to 1 3/4 cups. Doubled the eggs and flour, too. (Thanks for the post, GourmetMommy!) The lemon lovers in this house were thrilled! Loved 'em!

Eggless Peanut Butter Cookies

Without a doubt, these are the best peanut butter cookies! Made 4 dozen for our school bake-sale... Best seller! Used 1 cup sour cream to replace buttermilk. Cut the cooking time down to 8 minutes in convection oven. A 1.5 inch ball makes a 3 inch cookie. Thank you for such a wonderful recipe!
