Chipotle Cream Chicken

This was easy to make and very yummy. I didnt bread the chicken because i feared it would get soggy before my husband got home. I also added about 1 TBSP of chipotle sauce from the can of peppers because we like spice! I also added a lil bit of flour to thicken the sauce and served over egg noodles. The husband LOVED it.

Lemon Garlic Tilapia

This was only my second time preparing tilapia and i thought it was wonderful. I did double the butter/lemon mixture and used fresh parsley and extra garlic. I upped the heat to 400 and thought 12 min would be fine but it was undercooked. I ended up cooking it for 20 minutes and even stuck it in the broiler for a few minutes. I probably ended up overcooking (im still nervous when cooking fish) but i actually really liked the finish product. This is a keeper.

Red Skinned Potato Salad

This is really good basic potato salad. I thought it was missing something and my grandmother (who is a wonderful cook) said to mix a little sugar and white vinegar in the mayo. I will try that next time. This recipe is a great place to start!

Hudson's Baked Tilapia with Dill Sauce

This was my first time eating (and preparing) tilapia. I thought this was delicious. My husband (who is not a fish eater) had seconds. I followed the recipe as written with the exception of adding more lemon juice to the Dill Sauce. I love lemon. I thought the Dill Sauce was perfect for this dish. YUM!

Candied Kielbasa

I added saurkraut and didnt enjoy the flavor. I feel like it would have been so much better without the kraut. Next time i will make it minus kraut and hopefully rate it 5 stars.

Wonderful recipe. I halved it because it was only my husband and I but it still made plenty for us and plenty for leftovers. I followed the recipe exactly but added 2 chipotle peppers only because i had them in the fridge. Soooo good!

Melt-In-Your-Mouth Meat Loaf

Im not a meat loaf type of gal but my husband loves it. I wanted to try this recipe because it was a crock pot recipe and i have to admit this was very good. I did double the sauce including the sugar and thought it was very sweet, but delicious. Its a keeper.

Honey Roasted Red Potatoes

These were great! I followed other suggestions and used more then a pound of potatoes. i used about 6 large red potatoes, 1 whole onion, 3 tablespoons or butter, 3 tablespoons of honey and 2 teaspoons of dry mustard. I cooked for about 45 minutes. Then i put a little kosher salt on them and drizzled with more honey and put in the broiler for 3-5 minutes. I thought there were great. I am making them right now for a second time this week!

Ranch Burgers

I didn't like these very much. they weren't horrible but i think the crackers make it like a meat loaf instead of a burger. I didn't use a outside grill, but instead used a grill top for my stove (apartment living). Im not sure if that had anything to do with it...

Honey Garlic Vinaigrette

One of my favorite salad dressings. I used 1/2 cup vinegar and 1/2 cup oil as someone else suggested and thought it was perfect. I poured this over baby spinach, sliced red and green peppers and cucumber. yum yum!!

Bodacious Broccoli Salad

This was the very first recipe i got from allrecipes.com. I brought this salad to a picnic and it was a hit. I could eat the whole bowl of salad by myself, it is sooo good. I did not tweak this recipe at all.

Baked Teriyaki Chicken

This is great! I doubled the sauce and basted & flipped the chicken every 15 minutes. I really globbed the sauce on (for lack of a better term). It was soooo good. I served with rice. the rice absorbed all that extra sauce i put on the chicken. I tired this with chicken breast also but thought the thighs were so much better.
