Healthy Garden Salad

Love that you can make this light, fresh tasting salad with frozen and canned winter ingredients. It gets rave reviews from friends, holds well in the fridge, an is great on top of a green salad with some chicken for a main course salad. It's been well received as a side with jerk chicken and jasmine rice, and also with enchiladas. It's also fantastic as a salsa to scoop with tortilla chips. My changes after making it the first time: add the zest of 1 lime, no garlic, less vinegar and oil, diced roasted jarred red pepper instead of tomato, no scallions, roast the corn first, half the edamame, a tad more sugar. It was good as is, but stellar with these changes.

Cucumber Sandwich

I am just plain crazy for this sandwich, and I can't imagine why I never thought to put these ingredients together myself. I've made this multiple times now, and have adjusted it to just my liking: Use a handful of fresh baby spinach in place of lettuce, used only 1T of lite cream cheese mashed together with 1/4 to 1/3 of an avacado and a pinch of onion powder and black pepper(this seemed to make plenty of spread to cover both pieces of bread), add sliced pickles when the mood strikes. I've tried it sprinkled with a variety of vinegars, and although I like them all, balsamic is my absolute favorite. I also pass on the EVOO, and sometimes I sprinkle a little drief basil and/or oregano over the vinegar. Absolutely fabulous & oh, so satisfying.

Tofu Parmigiana

I loved this tofu parmigiana recipe served over linguini with tomato sauce. The only thing I did differently was to just melt the cheese right on top of the tofu slabs in the pan once they were cooked, instead of putting them in the oven in a casserole dish with sauce. Then I just spooned sauce over them when I served them.

Super Spinach Pie

I didn't like this recipe at all. The filling wound up being a pile of mush, and it wasn't much like a pie at all. Maybe it would suit somebody else's taste better, but my family didn't care for it.

Butternut Squash Soup

I didn't enjoy this recipe at all. I found the final result to be the consistancy of baby food and to have lost the great flavor of the squash altogether. Perhaps I did something incorrectly when making it...

Bran Muffins I

These bran muffins are absolutely wonderful and simple to make. I scaled the recipe down to make only 9 muffins and they still came out incredibly well. We'll surely make these regularly in the future for a quick breakfast on the go. Also, for a great variation, we added a spoonful of raspberry jam near the middle of the muffins as we were filling the cups with batter. The cooking time is the same, but you end up with a sweet surprise in every muffin.

Quinoa Pilaf

This recipe was alright, but wound up being somewhat disappointing. The end result was kind of sweet tasting and all of the vegetables were very mushy. I will look for a different recipe using quinoa.

Black Bean and Rice Salad

While this dish was quick and easy to prepare, I thought the results weren't very tasty. The flavor of the black beans was overpowering, and although I enjoy black beans in chili and other dishes, I did not like them in this one at all.

Jamie's Minestrone

I was searching for a GREAT Minestrone recipe when I stumbled onto Jamie's version. It had some different ingredients than others I'd looked at, the red wine and tomato sauce in particular, and I think it was these differences that made this soup so extraordinarily good. As I've tried to move toward a more healthy and nutritious diet, I've often been disappointed at the lack of flavor in many "healthy" dishes, but this minestrone soup has more flavor than I thought possible. Definitely worth the time to make, and I'll never crack open a CAN of Minestrone again.

Vegetable Lo Mein

I don't have kids, so I don't know what they'd think, but my boyfriend and I both loved this dish. I served it over rice, instead of with noodles, and neither one os us could get enough. The stir-fry sauce is better than most that I've had in Chinese restaurants.

Abby's Super Zucchini Loaf

I was terribly disappointed with this recipe. I made it for an informal party that I was attending, and despite the fact that I followed the directions exactly, the bread came out so dry that I just threw it in the trash. The regular old Fanny Farmer zucchini bread is much better and takes a lot fewer extra steps.
