A Jerky Chicken

Reviewed: Jan. 9, 2009
This was my first time making Jerk Chicken and it was absolutely delicious. I used chicken breast cut up and doubled the sauce. Although I didn’t have allspice I substituted with nutmeg, cinnamon and cloves. I went to the store to pick up some real allspice this morning and going to make this wonderful dish again next week. Great with rice Yum

Curried Honey Mustard Chicken

Reviewed: Oct. 1, 2008
This is so good. I’m only giving it four stars because I don’t think it’s "the best" I’ve ever had. But the chicken was nice and tender, very juicy. The sauce was great too, but don’t use all the butter it calls for…I also added a dash of nutmeg. Very nice

Caramelized Baked Chicken

Reviewed: Aug. 21, 2008
The only thing I did differently was ½ cup honey and ½ cup ketchup and cut up the chicken breast into pieces. This was great. Thank you so much for the recipe.

Homestyle Chicken and Biscuits

Reviewed: Aug. 21, 2008
This was great. My hubby never eats veggies but he ate every bit on his plate. I used the 98% fat free cream of chicken and put a dash of garlic and onion powder in the mix to give it more flavor. I also added a little bit more milk and used a 10 oz bag of frozen carrots, peas and green beans. I did not use canned chicken; instead I cut up a chicken breast and cooked it before adding to the recipe. I used frozen biscuits after 15min and foiled the top for another 15min, took off the foil and broiled for 5min to get the biscuits a golden crisp. Everything worked out wonderfully, I will make this monthly. Thanks :)

I added just a tad bit of vanilla extract and used Egg Beaters instead of real egg to take some calories off, turned out wonderful.

Tangy Chicken Fajitas

I marinated the chicken overnight and put a little lime juice on the onions before I sautéed them. The chicken came out very juicy and had a great flavor.

Berry Crumb Tarts

Reviewed: Jul. 22, 2008
Quick and simple, just make sure you unfold the pastry when it thaws which takes about 40 mins. Try not to use too much butter when you’re making the crumb mixture so it will form into crumbs and not dough. Tasty thanks.

Italian Sausage Soup with Tortellini

Reviewed: Jul. 21, 2008
WOW this really is the best. Mine didn’t come out very soupy at all, maybe because I used a 20oz package of fresh tortellini, mmmm but it was great. I also used 2 cans diced tomatoes; Italian seasoning instead because I was out of everything else….I used fresh baby spinach as well and no zucchini but next time I’ll pick up a zucchini because I love those. My hubby is not a great veggie eater but he ate everything in his bowl, I am so pleased with this recipe. I will make this again soon for my relatives.

MMM this is a great dip...made minor changes. I used 1 cup plain fat free yogurt and 1 1/2 cups low fat sour cream...I didn’t have the peppers on hand so I used 1tsp. Cayenne pepper and 1 tsp. Habanera sauce. I will make this again...Thank You

Coconut Smore Cookies

Very good, made these last night...I might try making them with marshmallow cream instead of melting the marshmallows to save time. They turned out to be nice and soft, my hubby loved them.

Glazed Meatloaf II

Reviewed: Jul. 10, 2008
My husband and I love this meatloaf, it's so easy and never any leftovers. Although he is not a fan of onions so sometimes I’ll use a few dried onion flakes or French’s fried onions (he loves those) I also add ½ cup bread crumbs for a tasty texture. YUM

Shrimp Scampi Bake

I didn’t bake this, I sautéed the ingredients because I was using cooked shrimp. I didn’t want the shrimp to be chewy. Turned out great and my hubby LOVED it. Will make this again

This is a pretty good recipe, the vegetables I used was onion, carrots, bamboo shoots, water chestnuts and pineapple. The sauce is very thick so make sure you use all of the pineapple juice.

Salsa Chicken

Reviewed: Mar. 13, 2008
My hubby loved this one. I didn’t have taco seasoning so I sprinkled cumin, chili powder and cayenne pepper on both sides of the chicken. Pored the salsa and a little bit of water on top baked for 30min then put pepper jack cheese and mozzarella on top and let it melt. MMMM so good, I will defiantly make this again.

Banana Pudding IV

Reviewed: Mar. 12, 2008
Mmmm great recipe, I used reduced fat vanilla wafers and reduced fat cream cheese. My hubby said to use more wafers next time, I agree but I used more than half a box. This is a really sweet desert, but will keep this in my recipe book for the future. Thanks for the submittal
