Garden-Fresh Bruschetta

This was simple and delicious. Of course I added some changes because that's what I do :) But my hubby BEGGED me to make it the very next night just for him (the first night was for a dinner party). I added balsamic vinegar to the mix- it needs a bite to it. Not too much though, just to taste. I also brushed each side of the bread slices with melted butter and sprinkled with garlic powder. I added A LOT more than the called amount of fresh basil, and covered all of the pieces with fresh shaved parmesan. Looks so nice and tastes even better!

Baked Chicken and Brie

This was so surprisingly elegant for how simple it was to make. I made this for a dinner party and it got rave reviews! I used Italian Seasoning instead of only Oregano, and when I put the Brie on the chicken, I placed a large fresh basil leaf under each piece. DELICIOUS! Great presentation too!

Italian Style Pork Chops

I got this recipe MAYBE 2 weeks ago, and I can't even count how many times we've eaten it so far!! A definite staple in my house now. I tweak EVERY recipe I've ever come across to my family's taste, but the only thing I did to this one was pour the leftover melted butter in the pan between all of the chops. YUMMMM!

Roasted Chicken with Risotto and Caramelized Onions

This dish was delish!! My friend and I made it for a small dinner party, and everyone liked it. I used red wine vinegar instead of balsamic vinegar for the onions- also added chopped garlic to the onion mixture. I did not use a roasted chicken- I chopped up 3 chicken breasts and sauteed in olive oil with garlic, rosemary and freshly ground pepper. I also added cooked shrimp to the chicken skillet just before the chicken was done. Also added fresh chopped basil to the risotto mixture just before it was done. YUMMMMMM.

Buttermilk Fried Chicken with Gravy

This is the best fried chicken I have ever had. My hubby LOVES it! There are a few changes I made that you might want to hear! I soaked the chicken overnight, and added salt, pepper and paprika to the bag- I made it a few times, and one of those times I was in a rush and soaked for only an hour, and soaking overnight makes SUCH A HUGE DIFFERENCE in the flavor! You’ll see! I added paprika to the flour mixture as well- you can’t have fried chicken without paprika. I didn’t cover it- I didn’t want it mushy. I cooked it, uncovered, low heat, nice and slowly so it wouldn’t cook the outside too fast. The secret to any great sauce/gravy: flour and butter. Here’s what you do: First, you need to add your flour to some SOFTENED butter- can’t be melted. You want it really thick? Just add more flour. Stir that until it is very smooth. Set aside. Add the milk and broth (I used chicken broth instead of water- more flavor) to the drippings. Heat that up, and then add the butter/flour mixture. Stir until thick. Add salt pepper and garlic powder. There will be NO clumps- BEST GRAVY EVER! And you can use that for ANY sauce or gravy you want thickened! Enjoy!

Blueberry Spinach Salad

YUMMMMMM!!!!!!!! I've been on a total salad kick, and this recipe was perfect!!!! I left the recipe at work though, so I made a different dressing- 1/2 cup of veggie or olive oil, 1/4 cup raspberry vinegar, 1/2 onion, 2 garlic cloves, salt, fresh ground pepper, blended in food processor. DELICIOUS!!!! LOVE the blueberries, I used walnuts instead of pecans, and I used Feta cheese instead of blue cheese. I also added chopped pears and red onions- can't get enough of it!!!

Bow Ties with Sausage, Tomatoes and Cream

This is soooooo good! I used a can of diced tomatoes which made the prep time that much faster. Instead of using the whole sausages and removing the casings, I just used ground Italian style pork. Even faster!! I did not use pepper flakes, because I'm a big baby when it comes to spice. I didn't drain it either; I don't think the sauce was thin at all. I can't even say how good this was!!! Thanks!

French Onion Soup V

This is now a staple in my house!! I've made this so many times now, that I've got some additions that make it even better!! I don't add any water; I add a can of beef consomme, and increase the amount of wine. I still add the dried thyme for presentation, but I also add a few sprigs of fresh thyme and just remove before serving. We've tried another French Onion soup from this site, the Gratinee I think it was, and there's no point in doing so after this recipe. This will definitely be a family recipe from now on! Thanks!

Fry Bread Tacos II

OMG. This fry bread recipe is SO GOOD!!! Sad to say, but my hubby and I only had 1 left for the actual tacos! We couldn't stop eating these things before dinner was ready! We stood there like little kids thinking of all the things we could use this for... "oh, my Spinach Dip!" "Ooooh, french onion soup!" "Mmmmm, garlic bread!" This was fun!!! Thanks!

Chili Dog Casserole II

This recipe was great! At first glance I thought it sounded so wierd, but I know how looks can be deceiving! The only thing I changed was I used 2 bags of cheese- one to fill all the tortillas, and the other to top it off. Delicious!!

Asiago Hash Browns

The flavor was good, but I'm a cheese freak so it's pretty hard for me not to like something that has cheese in it anyway! :) I added some FRESH chopped basil, not dried. That was a great flavor boost. There's only one thing I will change next time, because it was somewhat dry to me? Maybe it's me, but I think I will add more cream or sour cream. Other than that, good recipe! Thanks!

This was good! I did everything exact but had to add some garlic, because I would drink garlic if I could. :) the only thing I would have done differently was add more cheese, because, again, I would drink cheese if I could. Thanks!

Meatloaf that Doesn't Crumble

Um, can you say yummy!!!??? We loved this recipe, even my 5 year old ate it, and believe me that is no easy task! I didn't add bell peppers because we just don't really like them. Everything else was followed exactly- it did not fall apart AT ALL!!!

Anthony's Lime Chicken with Pasta

I LOVE this recipe. I've made it I don't know how many times now, and I think I've got it down to perfection for my family, so here are my changes for anyone interested! :) I don't like it with small shell pasta; it's better with something larger, bow-tie or even egg noodles. And I add a bunch of FRESH chopped basil to the pasta. Yum. I add chopped onion in the pan with the garlic. I double dip the chicken piece because it does get a bit soggy. I do not add the tomatoes. Takes away from the lime flavor I think. I lOVE the limes with the chicken- absolutely delicious. I top it off with a mound of shredded mozerella. We LOVE IT!!! Thanks!

Baked Chicken and Onions

This recipe was good, but I had to change a few things as always- I just can't help myself! Instead of white wine I used white zinfandel- this type of wine with chicken is awesome, gives a very unique but delicious flavor. I would have used half the amount of lemon juice; I love lemon, but I don't want it to be the main flavor of the dish- a little overpowering. I did not use a whole head of garlic, and probably would have prefered it minced instead of sliced. No paprika. I used garlic powder instead. Other than that it was great!
