Mango Custard Pie

Living in the kingdom of fruits, Taiwan, I am lucky to have sweet, fresh, and very good quality of mangos. Since the mango is so fresh, I didn't use any spice and hoped to get the original mango fragrance. Unfortunately the natural flavor and fragrance were gone after baking. The custard became very plain, I have to say. As a result, I topped the pie with more diced fresh mango and it turned out not bad. It's important to keep this pie in the fridge at this hot summer. Or the custard will turn too soft, and the mango will collapse down.

Banana Crumb Muffins

I love these muffins. As usual, I always cut down the sugar, but this time I added some chocolate chips and they turned very good.

Bavarian Apple Torte

I made this for a Christmas potluck party. Everyone loved it. Like other's suggested, I microwaved the apple before laying them on the top.

Thai Peanut Chicken

It is fantastic! I added some water in the peanut butter sauce to thinner it and bring more juice in the dish. I also used carrots cooked with chicken as another vegi to this dish. For broccoli, I steamed it to semi-cooked first and finished cooking with the heat of chicken and carrots (in the wak).
