Slow Cooker Beef Pot Roast

Can also use Stew Beef. Add a splash of red wine along with the beef stock- SO good!

Shrimp Scampi Bake

I reduced the butter by about half, added white wine (I would add more next time), sauted some bell peppers and added those when roasting, and increased the garlic. Next time I'll add more lemon, more salt and more wine. And also not reduce the butter so much, if I need sauce for pasta. Yummy!

Sausage and Bow-Tie Pasta Florentine

Good starting recipe! I browned diced Basil/Sundried Tomato chicken sausage, added garlic and fresh spinach before adding alfredo sauce and additional Parm cheeese and crushed red pepper. Yummy!

Easy Indian Butter Chicken

Very yummy. I used evaporated milk instead of cream. I ended up using diced tomatoes and just used the immersion blender to smooth things out. Easy recipe!

Peanut Butter Cup Cookies

Perfect! I cut the Reese peanut butter cups in half to make them go further. It was the perfect size for the cookies, not overpowering. Delicious and a new tradition for Christmas time!

Fluffy Pancakes

The best pancakes EVER! Super fluffy and delicious. We had leftover eggnog, so we subbed half of the milk for eggnog for a nice subtle flavor. Delicious!

Banana Crumb Muffins

These turned out great! I added the vanilla and cinnamon to the batter, per the recommendation of other cooks and it was delicious. I baked 12 muffins and then used the rest of the batter with the topping to make a loaf of banana bread, which was a bit dense, but turned out delicious, as well. The crumb topping does get soggy on the second day- not sure how that can be prevented, though.

Pumpkin Gingerbread

Delicious!! I followed this recipe exactly, though I added nutmeg instead of cloves bc I didn't have any. I made this into muffins and cooked them maybe 20 minutes at 350. I also added a few butterscotch chips to some of the muffins, which caramelized and are so yummy! I highly recommend this recipe!

Creamy Caramel Flan

This flan was the BEST! You can't taste the cream cheese very much at all, which was something that I was worried about. It just adds a dense, creamy texture and cuts the "egginess" that flans sometimes have. This will now be my flan recipe! Yum!

Pumpkin Turkey Chili

This chili turned out great! I served it to my husband without telling him what was in it and he gobbled it down! The pumpkin flavor isn't prominent at all, it just cuts down on some of the acidity that chili can have. Fun seasonal dish!

Italian Amaretto Margaritas

Very good- I wasn't sure how well things would come together, but it was very good! I added a dash of grenadine, bc I didn't feel like sugaring the glass rim. A great alternative to a standard margarita!

Blackened Tuna Steaks with Mango Salsa

Yum! Such a delicious blackened tuna recipe! Very spicy- will probably reduce the cayenne next time- we love spice, but with the mango salsa with jalepeno, it got to be a little much. I would add a dollop of sour cream next time, to cut the spice a bit but not sacrifice the flavor. New favorite blackening recipe! Thanks!

Great recipe- I sauteed the onion (I used red onion) with fresh sliced mushrooms, which gave it a great mushroom flavor. Perfect cold day dinner!

Great recipe! Substituted 1/2 of the white sugar with brown, used allspice instead of cloves and added extra pumpkin- so good! I also added cinnamon to half of the glaze (per other reviewers suggestion) and instant espresso to the other half- both were really good!
