Ginger Salmon

My favorite way to eat salmon is grilled with some lemon juice and soy sauce, but if I'm in the mood for a sauce of some sort, this is excellent!

Delicious Ham and Potato Soup

I first made this about 4 months ago and have probably made it 8 times since! Amazing! I throw a 1/2 cup of shredded cheddar cheese in right before serving to give it a little "cheesy" flavor but it's excellent without it as well.

Twice Baked Potatoes

I made some adjustments to this recipe. I put just a dash of red pepper flakes, and left out the mushroom. I also used turkey bacon and fat free sour cream, and about half the amount of cheese, but they were plenty creamy and delicious! I loved the "kick" that the black pepper gave them.

Herb Roasted Pork

This was excellent and out of the 5 people we had for dinner that night- every single one commented on how much they liked it. I doubled the salt, pepper, garlic and sage and used balsamic vinegar rather than white vinegar and it was excellent. I only needed about 2 total hours for a 5 lb. pork loin.

Best White Icing Ever

Never Enough Green Bean Casserole

Pretty good. I would probably cut down on the cheese in the future, a little bit too cheesy for my taste. Either that- or I'd add a few more green beans. It was a wonderful edition to our Thanksgiving menu, though!

My husband and I loved this dish. I am going to make it again, and add some broccoli or sugar snap peas for a little more variety. I added a bit more crushed red pepper for more of a "kick."

I thought it was delicious!!! I actually used a few less tomatoes than it called for and really like that- because the tomato wasn't overpowering. I also used a little more Cajun Seasoning.

Ken's Spicy Curry Chicken

Really enjoyed. Added some cornstarch to thicken somewhat, as well as some onion, carrot and celery. It was delicious! The fresh basil is very important and next time I will try red curry paste in stead of green for a different taste.

Indian Chapati Bread

Wonderful. I have been disappointed that none of the grocery stores in my area carry Chapati, but when I found this recipe I couldn't wait to try it. It did not disappoint. I will most likely make this often, and keep some on hand.

Cheddary Artichoke Snacks

These were great. The artichokes have a distinct taste, so if you don't like artichokes, I wouldn't recommend it. But, if you do, then you'll love it.
