Asian Lettuce Wraps

Yum! I substituted turkey to make this even healthier and it was an awesome, fresh dinner. Make just as written and did create a dipping sauce as one reviewer mentioned (1tsp sesame oil, 2T soy, 2T rice vinegar, 1T chile paste, sugar and i green onion slices). Really good spicy, as well. This recipe is definitely going to the rotation!

Greek Chicken Pasta

I found this only ok. I made it just as the recipe said and found it to be dry. I also think that a pound of uncooked pasta is a bit much. Next time I'd try canned tomatoes, fresh basil and probably throw in zucchini.

Chocolate Bourbon Pecan Pie

This was good. Super easy to make too. The only modification I made was to put the chocolate chips on the bottom as suggested by several others. Be prepared, it is really sweet. Also, because I like bourbon and chocolate and pecans I thought I'd love this. The bourbon was ok but seriously noticeable(I used Woodford Reserve). Many other reviewers mentioned they omitted the bourbon or replaced with Kahlua. I think I might try the caramel Bailey's next time, for a sweet, nutty, chocolately, caramel pie.

Tomato Chicken Parmesan

Given the simplicity of the recipe I didn't expect this to be so good. It was delicious! I used buffalo mozzarella to top, a spicy marinara and served over angel hair.

Yummy Honey Chicken Kabobs

These kabobs are seriously good. So fresh and healthy! On my veggie kabobs I did cherry tomatoes, green peppers, zucchini, onions and pineapple. Delish! Definitely double the marinade though.

Shrimp Scampi with Linguini

Oooooooh...so delicious! Took advice and used less lemon. When I do it again I will add the whole pint of tomatoes. Also, be careful not to put the shrimp in any longer than specified. They cook quick. Served over fresh angel hair. Whoa! And smells sensational when simmering.

Crabbies

Family favorite! We actually use shrimp and call these 'Shrimpies'--this recipe is the closest I could find to re-create my step-mom's recipe. They are VERY good with shrimp. I use two cans of tiny shrimp--sounds gross, I know. I also add fresh garlic(1 clove) and a little bit of parmesan for a little "ooh la lah" I would definately never use anything other than old english or real english muffins(don't get store brand they just aren't as good). It makes tons of shrimpies and its really hard not to stop eating them!

Antipasto Pasta Salad

I can't tell you how many times I have made this salad. Its one of those things that you can add or subtract things too. I tend to use larger cuts of cheese and more balsamic. It makes a ton, so make sure you are cooking for a crowd! The only downfall is that the pasta turns brown after a day because of the balsamic..but its even better!

Blue Cheese Beef Tenderloin

I used a different cut of meat..but the results were incredible. I don't even like beef, just made it for my boyfriend. Not only is the marinade fabulous...that sauce is incredible! I woke up and ate it for breakfast too! I used a large sirloin and broiled it the same way. I imagine that any somewhat fatty cut of meat would be great.

Mini Ham And Cheese Rolls

love this recipe!! as already suggested, I cut the rolls all at once, the butter/poppy mixture should go inside the sandwich, this way the cheese melts in and the mixture gets good an gooey. I use fresh minced onion. The best part is that these rolls can be made, wrapped frozen and baked and be availiable anytime...

Gerry's Chicken Enchiladas

I have been making this recipe for a few years and everyone loves it. My sister lives in Texas and sometimes calls just to mention the enchiladas and tell me she is thinking about them. Yes, if you want to make them they are a little time consuming but it is the perfect recipe to make while talking to family and friends. I always use a little more cheese and flour tortillas. Sometimes I add cilantro in addition to the green onions...but this recipe is fabulous as is. Thanks Gerry for these killer enchiladas!
