Brenda's Apple and Pomegranate Crisp

OMG that was so good...I so needed vanilla ice cream with it. If you need an easy way to remove pomegranate seeds do it in a bowl of water (the seeds sink to the bottom while the pulp floats). This was so good and the only thing I changed was I used whole wheat flour...DIVINE!

Granny Kat's Pumpkin Roll

OMG!!! I have been scared of doing a roll dessert but with some tips from reviews this was the easiest dessert. I didn't change a thing to this recipe. I lined a cookie sheet with parchment paper and cooked it that way. I then put the powder sugar on a towel, placed it on the cake, put my cooling rack on top of that and flipped it. After I frosted the cake and rerolled it I put it in wax paper and put it in the fridge to harden up... It was DELISH!!! so rich and yummy.

Nacho Cheese Sauce

This was so good and so easy to make, even my husband could make. I used sliced cheddar instead of the processed stuff but even shredded would work well. We had it with nachos and it was good!

Sparkling Punch

great punch...made it for a baby shower, used pink lemonade and left out the sugar and used ginger ale, delish. Served white wine on the side for the adults and it was really good and easy.

Kitty Litter Cake

Mom's Country Gravy

This is our new recipe...my husband says it's better than my MIL's. I made a double batch for camping with my inlaws and the men all raved about it. I add 1 lb pork sausage and use the grease from it and make up with the vegetable oil to equal the 1/2 cup it calls for.

Self-Filled Cupcakes I

Okay I needed to make 24 cupcakes so I changed the quantity to 24 (probably just not thinking right since I wasn't feeling well) and I was able to make 24 cupcakes AND a full size cake LOL...I made these for my son birthday and replaced the chocolate chips with mini baking M&M's. I put a small scoop of mix in the baking cups (the size of a cookie scoop), added a heaping spoonful of the filling and then topped it with the rest of the mix. I filled them full since I had TONS of mix. I frosted these with the sturdy whipped cream frosting from this site. With the remainder I made a bunt cake and just put the filling around the middle of the cake and topped it off with remainder.

Sturdy Whipped Cream Frosting

Okay this was really good...I needed to frost 24 cupcakes so I changed the quantity to 24...big no no, I have TONS of frosting but then again I had way too much cupcake mix so I can frost cupcakes and not skimp and same with the cake i made. This is so light. I made it last night and put it in the fridge so I can frost the cupcakes today. I have found my frosting. I added some blue food coloring to to tint it and it took really well.

Famous Japanese Restaurant-Style Salad Dressing

This was fantastic. Tasted exactly like you would get in a Japanese restaurant. There was a lot of prep and ingredients but it wasn't that bad with a chopper and since you are putting it in a blender it didn't have to be precise. I will be making this again.

Chocolate Bar Fondue

This was delish...I made it for V-day and my family raved about it. I scaled it down a bit and used 1/4 lb milk chocolate and 1/4 lb dark chocolate. I used amaretto in place of the coffee and had to add a little bit more cream to make it creamier but it worked. I will do this again!

Cranberry Upside-Down Coffee Cake

OMG...I made this for work today and got rave reviews. I used half whole wheat flour and half all purpose. I also upped the topping amount (stick of butter and 3/4 cup of brown sugar) I also used 2 cups of cranberries and chopped them and about 3/4 cup of walnuts. I layed the cranberries and walnuts down first by mistake but it didn't effect it. I didn't have a 9 inch spring form pan so I used a round cake pan. I sprayed with cooking spray and lined the bottom with parchment paper since i am known for having things stick and didn't want this to stick...worked like a charm, slid right out with no problem at all. I also cooked it at 325 for 65-70 minutes and it was great. This was served the next day and was amazing, can't wait to try it warm though and maybe even blueberries.

Champagne Punch III

I made this last night or our New Years Eve party and it was a big hit. I made a few changes that I don't think I will do again since it made it really almost to sweet. I used Arbor Mist wine and 7-up but even the guys were liking it. I will make this again!

Pumpkin Bread

This was excellent. The only thing I did diffrently was use fresh pumpkin and I added 1 cup of chopped fresh cranberries (I will use 2 next time). This is almost exactly like the bread at a local bread company and they use chocolate chips (my next adventure). I will be using this recipe for bread this year for christmas gifts!

Chocolate Fondue

You can't get any easier. I actually used a triple chocolate chunk frosting and it turned out wonderful. I put it in my fondue pot and served it with strawberries, fresh pineapple & mini chooclate chip cookies! All the ladies at my girls night really liked it!

Spiced Plum Bread

My co-worker brought in a huge box of plums from his tree and I decided to make some bread. Overall this is wonderful recipe and I think works best with plums that are not completely soft. I used a potatoe peeler to peel these them and it helped alot. Okay my experience with this is you can't get it wrong. On a whim I decided to make this, I didn't have enought honey so I added a some sugar. Didn't have enought sugar so I used splenda for baking for part of it and didn't have walnuts so I used pecans and the batter was dry so I added another egg and a little bit of milk to make the right consistency for bread(yes it was a cook on the whim because i wanted to but didn't want to go to the store). This bread came out wonderful, moist in the middle and the sweetness &tartness of the plums was a nice touch. Very good and as you can see hard to mess up LOL

Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes

I made this pasta salad for my daughter's 1st birthday and it was a hit! I adjusted the servings to serve 24. I refrigerated the dressing and it calmed down the heavy vinigar smell and it helped. I didn't have rice wine vinigar so I substituted red wine vinigar. I also didn't add the chicken as it was for a side dish. I also used corkscrew pasta. I do think next time I will add a little bit more pesto because we like pesto. Everyone at the party was asking for the recipe and it was even good the next day.

Soft Peanut Butter Cookies

I doubled this recipe and it actually made 4 1/2 dozen cookies. I did make a couple of changes and did 1 1/2 cups creamy peanut butter and only 1/2 cup of margarine and I added a bag of chocolate chips (next time I will use mini chips). They were really good but hard to work with because the batter is really crumbly (but what peanut butter cookie batter isn't). It was really hard to mix all the flour because of the crumbly batter. I used a cookie scoop and made them into balls and then just used my hand to pat them flat. I also let them sit for 1 minute before removing them from the pan. Overall they were really good and my husband said they were not kid friendly (his clue that I had to keep them home and not give them to my son's class LOL).
