Apricot Chicken III

My husband and two year old gave this chicken a thumbs up! Me too. I turned it into a crockpot recipe. I think that took care of the need to marinate. The chicken was moist and flavorful all the way through. I will probably add a few crushed cloves of garlic next time. I used a whole packet of french onion soup. I think it depends on the brand. The one I used had way less sodium then the one sitting next to it on the shelf.

Mrs. Strong's Casserole

We really liked this. I blended the cream cheese mixture into the tomato mixture like someone suggested. I also left the green onions out because of my husband and 2 year old. I then just sprinkled them fresh on top of my bowl. It was yummy!

Baked Scallops

This was pretty good. I dried the scallops on paper towl after washing and it was still watery on the bottom. The crunchy top was yummy. I'll try it again.

Barbara's Golden Pound Cake

This was very good. It had great texture. It seemed to get better each day after I made it. The last piece was awesome! I made my glaze a little thinner by adding more lemon juice. That gave it a good tartness. Yummy.

Creamy Cilantro Chicken with a Kick

Yummy! I could almost drink this marinade. I used only one serrano chile because of my husband and 2 year old. It was still quite spicy, but all three of us loved it. I am definitely going to try the marinade on shrimp and maybe tofu.

Chesscakes

Wow! These are awesome. I ended up with 24 regular sized and 12 mini from just one recipe. I used my favorite chocolate cake recipe instead of a box and used a chocolate ganache icing recipe from this site for the top. The only issue I had was that the crust did not brown well on the regular sized cakes. Maybe my pans? Maybe next time I'll bake the crust quickly before I add the jam and batter. I agree that these could be a lot of fun to get creative with. Thanks for sharing!

Tzatziki Sauce

Super yummy! I feel like I just discovered an acient Greek treasure. This is so flavorful. I grated the cucumber like some other recipes called for. I like the texture that way. I used parsley instead of mint, because that is what I had. Wow! I want to put this on everything!

Onion and Cheddar Burgers

These were very good! My family really enjoyed them, even my non meat loving 2 year old. I added 1 rounded teaspoon of dijon mustard and a dash of garlic powder to the mix. And yes they were rather messy in the broiler, but mine stayed together just fine.

Slow Cooker Chicken Taco Soup

Yummy! I used diced leftover roast beef to make it Beef Taco Soup. It was very good with tortilla chips and cheddar on top. You could not taste the beer at all, but I'm sure it enhanced the flavor.

Creamed Spinach II

This was very easy and quite yummy. My 2 year old gave it the thumbs up. I took the leftovers and thinned it a bit with milk, added a little mashed tofu and mixed up with cooked pasta. Toddler lunch! Thanks for sharing :)

Yummy! I converted this to a crock pot recipe. I put all ingredients in the crock pot, except the oil and cilantro. It came out great. I got a thumbs up from my husband and two year old.

So easy, so yummy! This pleased my Mother, my Husband and our two year old. That is impressive! I used roasted garlic cream of mushroom soup. The "gravy" that the roast produced was fantastic. Thank you!

Slow Cooker Guisado Verde

Fantastic! I used a 32oz. jar of tomatillo salsa to replace the tomatillos, onion, garlic, jalapeno and chiles. It had everything in it. I also replaced the water with chicken stock. During dinner my husband kept coming up with more ways we could use this pork. We ate it like soup, we had it wrapped in tortillas and next I will use it to make enchiladas! Yummy :)
