Traditional Mashed Potatoes

This recipe was great to get me started. Since I used organic potatoes, I didn't peel them. I just washed them really well and the skin added to the texture. I added some extra spices (dried chives, parsley, and thyme), and threw in a pressed clove of garlic. I also used soy milk instead of milk since my partner is avoiding most dairy these days. We topped ours with some nutritional yeast gravy and yum! Thanks for the recipe.

Delicious Pumpkin Bread

What great pumpkin bread. The pumpkin that I used yielded more than 2 cups (maybe 2 1/2), so I just threw it all in. It took a little longer to cook, but was SO moist (not gooey). I added more nutmeg and cinnamon than called for and used some ginger, too. Everyone that had it raved about it. I have added it to my recipe box!

Fruit Cobbler

I was looking for a recipe with fresh peaches since our peach tree yielded a bunch of little peaches this year. I made this cobbler because it seemed easy. It was. I added 6 cups sliced peaches as another reviwer recommended, and I added 1 tsp vanilla instead of a half. At first, I thought it was a little too sweet. But by the second helping, it tasted better. Warmed and with vanilla ice cream, it was very tasty. Thanks for the recipe!

Stewed Cabbage

After hearing that eating cabbage on New Year's Day is a good way to welcome a prosperous year, I went searching for the perfect recipe. I stumbled upon this one, and was quite pleased. I used two celery stalks, and added some thyme and basil. I am a vegetarian, and was going to make some tofu on the side, but decided to put it into the stewed cabbage dish. I served it on top of basmati rice (that was what I had) and it was great. A wonderful New Year's meal. Thanks, Kim.

Cheesy Acorn Squash

This was delicious, and pretty simple to make!! I used deicata and a deicata/acorn hybrid since that was what we had, and I added bread crumbs on top (before the cheese), and it turned out great. A LOT of flavors. Also, we dont have a microwave, so I just baked the squash at 375 for a half hour. It was our main dish, since we dont eat meat, and it was very filling. I will be making this again.
