Misti's Chicken Marinade

Loved loved loved this marinade. My son, who hates molasses, ate everything. Kept going back to the fridge and ate all the leftovers. I think this would work well with pork chops. Have to try that next time. Only change I made was to cut back on the oil by half.

Chicken Puffs

I thought these were great as is, and even better with the spices and herbs I prefer. Because it's such a simple, tasty, basic recipe it can be changed however you like. In my house It's become a sunday night leftover staple used for lunches in the week. This week is leftover chicken, mixed "Zen Garden" veggies, green onion, cubed medium chedder, and a quick chicken broth gravey with herbs and lots of garlic. Take for lunch with baby carrots, celery or a salad, and it's perfect cold or warm.

Different Chicken Cordon Bleu

This has become a staple in my house. I prep it the night before, and my 12 yo pops it into the oven before I get home from work. Add a salad and dinner is so easy and yummy. Some changes, add brocolii and mushrooms in the dish with the chicken, add onion powder to the sauce, omit the salt, and instead of stuffing I mix bread crumbs with italian seasoning and parm. I always make extra and serve it over egg noodles for lunch the next day. Because there is only 2 of us I use 3 chicken breasts cut into thirds, otherwise my son eats 2 full breasts and nothing else.

Flavour was great, really easy, but they spread too much to be crinkles. They looked more like chocolate cookies with blobs of icing suger on them. They won't go in my christmas cookie boxes, but my son says thats not a problem. He's eaten most of them already.

Chocolate Mice

Made these for my sons grade 6 christmas party. Easy, yummy, adorable and fun. Every kid and a bunch of the staff at the school has asked for the recipie. Served on a platter mixed with the Cake Ball recipie from this site. Fantastic. Mini white chocolate chips are a great "ear" option for a nut free environment.

Weeknight Chicken Cordon Bleu

This wa delicious. The only changes I made was to add italian seasoning to the bread crumbs, and made my own sauce as my son is sensative to MSG (no canned soup). 1 tbsp butter melter, 1 tbsp flour, cook over heat for 1 min, add 1 cup chicken broth, and 1/2 cup milk for creamyness, simmer until think adding whatever spices you like, I added garlic, onion and pepper. I also added 2 cups of sauted fresh mixed mushrooms. Me and my son wait until chicken breast goes on sale and then make a ton of these, bread them, wrap them in saran and freeze them. The breading stays on great, but do not defrost them in the mic as the cheese will melt and leak out.

Spinach and Mushroom Pinwheels

Used the suggestions for puff pastry and 1/2 cup shredded swiss cheese for extra flavor (and less work). Did not use all of them for my party and took some to work with some mild black bean and white corn salsa. A co-worker who caters asked for the recipe. I've already made more to stock my freezer. Love this recipe.
