Great idea with the potatoes! I made a version of this in New Mexico where we have rosemary bushes growing in our yard. I oiled large baking pan, sprinkled in garlic salt, pepper, snipped rosemary, then added 4 chicken breasts, covered with sliced onion, rosemary sprigs, fresh garlic slices, then tomato slices, drizzled with olive oil & refrigerated 2 hrs. Bake 425 covered 25 min, then uncovered 15 min. I served with basmati rice cooked with chicken broth and diced onion and green beans. Chicken was delicious and moist. We loved it. Next time I'll add the potatoes as suggested.
