Baked Teriyaki Chicken

Reviewed: Feb. 20, 2012
This turned out so much better then anticipated. I needed to make something for my family for dinner and I was out of ideas. I saw this, it seemed simple and fast so I went with it and was glad I did. I used chicken breasts and doubled the sauce as well. I also covered with foil for the 1st half of cooking.. it helped make the chicken super tender. Overall this was a winner for us and will become a regular in our house.

Delicious Ham and Potato Soup

Reviewed: Jan. 8, 2012
This was just what I was looking for. The soup is absolutely delicious. I did make a few modifications though.. I added more celery, onions & ham. I also added a bit of heavy cream & crushed red peppers and it turned out perfect. It was easy and a great use of my left over ham!!

Shrimp Scampi V

Reviewed: Mar. 24, 2009
This was just ok. A little bland.. I added more garlic then called for but that still didn't help. I wouldn't use this recipe for scampi again.

Fish Tacos

Reviewed: Mar. 20, 2009
I made this for my family & everyone LOVED it! The batter was super crispy and fluffed up very nicely. I was nervous the beer would be a bit overwhelming but not at all. The sauce was uhhh.. very interesting. I liked it though and it went well with the fish. I used a habanero in place of the pepper the recipe called for.. I like my food spicy! I will definitely make this again.

Blackened Salmon Fillets

Reviewed: Sep. 8, 2008
This was GREAT! I have never cooked salmon before so this recipe seemed easy enough and it was! My b/f wasn't planning on having any but when he saw how good it looked he decided to take a bite and loved it. It will definitely become a staple in our house!! Thanks!

Eggplant Parmesan II

Reviewed: Sep. 19, 2007
I usually love eggplant parm., but not this version. The eggplant did not get crispy enough for me. I sweated them out with salt for 20 mins. as others have suggested and then I cooked 10 mins on each side with some pretty thin slices. Still, it didn't have that crunch I was hoping for. I will stick to frying them next time...the extra fat is worth it! =)

Very good! I did not use the milk & added a few more seasonings (chili powder & cayenne pepper) to the breadcrumbs to spice it up. Everyone loved it! Thanks!

Wonton Soup

Reviewed: May 29, 2007
I don't know what happened. My wontons fell apart and were very mushy. And, I did not care for the pork/shrimp mixture..if I ever tried again I would use one or the other. Also, I did not like just chicken broth...I like more taste to my soup. =/

Chinese Steamed Buns with Barbecued Pork Filling

Reviewed: May 29, 2007
YUUUUM!!! Wow...I can't believe these turned out sOo good! They took quite a while and a lot of effort (I don't have a bread machine so I had to knead myself). But, it was well worth it!! I could not find any bbq pork either so I just took a pork loin and cooked it all day in the crock pot with lots of chinese bbq sauce & garlic. Very good on it's own by the way! Then, followed the directions exactly. best Pork Buns I have ever had!! My picky boyfriend thought they were excellent as well! ThanXx sOo much for the recipe!!

Chunky Marinara Sauce

Reviewed: Mar. 19, 2007
Good basic recipe for marinara sauce. I forgot to add the sugar but it tasted just fine without. I used Italian style diced tomatoes so I didn't need the oregano, plus I don't really like it. I did add some dry parsley instead. Also, I added some cruched red peppers to the oil while it was heating up for some spice and used about 5 cloves of garlic. Thanks for the recipe!

Easy Arroz con Gandules

Reviewed: Apr. 17, 2006
This was not as good as I hoped it would be. Mine was mushy and a little bland. I won't be using this recipe again. I guess I will just have to bite the bullet and ask my boyfriends mom for it.

Blackened Chicken

Reviewed: Apr. 5, 2006
Pretty gOod! Not enough seasoning though and I even doubled it. I will make even more next time so I can cover both sides of the chicken. Not quite spicy (hot) enough for me so I will put waaaay more cayenne in it next time. I only heated my pan about 7 mins like others suggested and it was just fine. It didn't smoke up very much...I thought it would be much worse. My chicken breasts were giant so I pounded them out and put them in the oven for 20 mins...just right! I will change a couple things next time but this recipe is defintely a keeper! ThanXx!!~

It's Chili by George!!

Reviewed: Feb. 26, 2006
Yummy, Yum, Yum!! Super easy recipe and very gOod!!! I did add/change a couple things, first I halved the recipe beacuse I do not have very many mouths to feed ...I did not have tomato juice so I used a can of diced tomatoed as other users suggested also I added the onions as I was browning the beef and added some garlic as well. I also added a lot more cayenne cause I like my chili really spicy! I didn't measure how much cayenne I added...just dumped a bunch in. Also, I left out the bell peppers simply because I don't care for them. It was really soupy at first but by the time the 1 1/2 hours went by it was perfectly thickened!! I will definitley be making this again and again...bye bye packs of chili mix!!! I can't wait to have the left overs for lunch! ThanXx!!!!~
