Fantastic Pumpkin Bars

This will be a definite 'go-to' for anytime of the year; thanks, Mindy! Try any or all of the options: 1 tsp. vanilla, 1 Tbs. orange zest (really adds!), 1/2 c. nuts, 1/4 c. coconut, 1/2 c. raisins or Craisins.

Alabama Fire Crackers

Amazingly good! For a southwest version, I use Hidden Valley Ranch "Spicy Ranch" mix - yummmm! And I also reduced oil to 1/2 cup. These are wonderful with tomato soup!

Throw it Together Cake

YUM!!! This is better than any other apple cake I've made. I sliced through some of the apples to make smaller pieces (You can do this while they're still in the can) and added a generous 1/2 cup of mini chocolate chips. Thanks for such a delicious recipe!

KNUDSEN Creamy Layered BLT Dip

Every loved this at our Memorial Day gathering. I mixed 8 oz. sour cream and chive dip, 8 oz. sour cream, and one finely-chopped green onion. Really kicked up the flavor.

Key Lime Cake II

Delicious and moist with subtle lime flavor. I used a vanilla cake and pudding mix. As another writer did, I added 1/2 cup water, 1/2 cup key lime juice, and zest of one lime. For unexpected flavor in the glaze, I added 2 TBS limoncello liqueur and one TBS key lime juice.

My mother, Hungarian background, made this recipe for years. Her version of the walnut filling: add 1 to 2 TBS. each of orange and lemon zest (depending on your taste preference)along with the egg and honey mentioned. Sometimes she would substitute about half a cup of sugar instead of the honey. She also made the apricot filling (mentioned by another reviewer)from simmered dried apricots, then mashed. She also added lemon zest for flavor.

Honey Key Lime Grilled Chicken

A tasty recipe. In place of bottled key lime juice I used the juice from one lime and included the zest from the whole lime for extra flavor. Replaced garlic with 1/2 tsp grated whole ginger root, added 1/4 tsp thyme and reduced honey to 1 TBS. Marinated for about 2 hours

Easy Lemon Cookies

SO easy and SO good! For those concerned about the "Fruit Loop" flavor, try using a yellow cake mix instead of lemon-flavored. I did this, added 2 tsp. lemon zest, a couple tsp. of lemon juice, and still added the lemon extract. They turned out to be very delicious and lemony. I like it that they are chewy, and that they look so delicate. They disappear quickly. This is a keeper - thanks!

English Muffins

MUCH better than the recipe I've been using for over 20 years!! To prevent deflating, after cutting out, place muffins directly on the griddle, then let rise as directed. Then, begin on a very low heat. If using electric griddle or fry pan as I usually do, start heating around 250 degrees. You can either leave it at this temp & cook about 15 min. per side (till slightly golden), or increase heat a little and cook for less time. This may take longer, but I never have the problem of them deflating. If using stove top, I begin them on low, then increase temp a bit after pan is hot.
