Luscious Lemon Snaps

Great lemony flavor! As suggested by other reviewers, i used more lemon juice and less oil. Sprinkled them with yellow sugar. So good!

Baked Chicken and Zucchini

This was so good (which makes my family happy) and also healthy (which makes me happy). i only had 3 zucchinis and 2 tomatoes so i added a can of diced fired roasted tomatoes. As suggested by other reviewers, i also added a small onion and 3 cloves of garlic. Easy to put together but tasted like it took a lot more work.

Tasty Bake Chicken

Juicy and yummy. Used skinless boneless chicken breasts and added a splash of wine (as suggested by other reviewers). I was concerned about it being too salty so didn't use all of the sauce. Turned out very nice.

Best Baked Chicken

Very good and easy to make. Everyone loved it. I used skinless boneless chicken breasts cut into smaller pieces. Used garlic powder and Old Bay instead of garlic salt and celery salt and glad i did, otherwise it would have been too salty. Also forgot to add butter but it was still yummy. Making it again tonight!

Tomato Barley Soup

Microwave Oven Peanut Brittle

Easy and delicious! I took the advice of other reviewers and added the (dry roasted) peanuts after the first round in the microwave. Also took a minute or so off the cook time to compensate for my higher wattage microwave.

Mouth-Watering Stuffed Mushrooms

My Christmas pot roast took much longer to cook than expected, so made a quick batch of these mushrooms. They were a hit! I used regular size mushrooms and used only 4oz of lowfat cream cheese instead of 8oz, but used the full amount of everything else, plus added 2 tablespoons of bread crumbs. Easy and delicious!

Breakfast Casserole

Everyone loved this and it was so easy! Doubled the recipe (so made it for 4). Didn't have any bread so substituted about 2 cups of ranch flavored croutons and used only 1 1/2 cups of milk (instead of 2). Also, had to bake for 50 minutes before center was cooked. Will definitely make this again.

Slow Cooker Italian Beef for Sandwiches

Delicious and so easy! I took the advice of some other reviewers and made the following substitutions: used beef broth instead of water; used onion powder instead of onion salt; used fresh garlic instead of garlic powder. Used a 2.5 lb roast and a full packet of Italian dressing mix. Leftovers made a hearty soup - added vegetable broth, Italian-style stewed tomatoes, fresh vegetables and barley. Family loved it.

Sweet Potato and Apple Casserole

I made this for Thanksgiving and also for a recent family dinner and everyone loved it (even a few who normally don't like sweet potatoes). To cut down on fat and sugar, i made this using only half the sugar, half the butter and omitted the pecans. It was still delicious! Will definitely add this to my recipe rotation.

Easy Broccoli Quiche

This was the first quiche i've ever made and it was great! Took the advice of other reviewers: used frozen pie crust and baked it for a few minutes before filling, used a combo of cheeses and a little cayenne for added zip. Had to bake for an hour before the middle was cooked. Surprisingly delish and easy!
