Roasted Rack of Lamb

Get over the intimidation of Lamb.Yum! This my first attempt at preparing this dish. I typically reserve it for nice dinner dates in which a chef prepares it. I will no longer spend astronomical dollars on a meal that is soooooo easy to prepare. My family loved it. We were literally still thinking about it at bedtime and I walked away feeling like this was the easiest and most rewarding meal I have ever made.I purchased packaged lamb from Sam's Club and 2 racks of seven were in there which was perfect for my family of 4. All of my ingredients were fresh down to the bread crumbs. I didn't have stale bread so I purchased a French loaf the eve before and cored the inside then toasted under the broiler. Tip-If your bread is too soft it will stick in a gummy manner in your blender/processor. I recommend taking your lamb out of the fridge no less than an hour before to bring the chill off considerably for a precise cooking time. Go easy on the Dijon and salt as they can be overpowering. I cooked mine according to directions and left it slightly pick in the center. If you overcook it or prepare it until it is well done it will be tough. Remember fresh is best and good luck!

Bean Soup With Kale

Perfect. My family loved and I was pleased because it is healthy and easy to make!fyi when shopping parsley is for garnish, I bought it and didn't end up using it.

Baked Teriyaki Chicken

Yum! Flavorful and liked the thickness of the sauce which clinged to the meat and didn't drip off. I liked that I didn't have to marinade for hours. It was quick and easy. Clean up was a mess though, I used glass pyrex lightly greased..next time I will line with well greased foil.

Slow Cooker Beef Stew I

I enjoyed it but in terms of flavor I wouldn't say it was dead on. I improvised with considerably more Worcestershire sauce7-8 TBSPs and creole seasoning and red pepper at the end. Next time I will add more celery and carrots

Grilled Fish Tacos with Chipotle-Lime Dressing

I was seeking a lighter alternative for my love of mexican food. I have never had fish tacos and this was great!I used tilapia marinated for 12 hrs and I omitted the adobo and hot sauces. The marinade was flavorful and I served mine on whole wheat tortilla's using pre-packaged cole slaw mix, cilantro and fresh lime juice for the topping. Yum

Barbecued Short Ribs

Yum-Tweaked it! It was tender, fell off the bone. I added 2Tbsp worcestershire, 1 Tbsp and a half of honey and sprinkled Mrs. Dash to season the meat (pre-sauce) Half way thru cooking I added close to a Bottle of krafts BBQ Sauce will cook again!

Alaska Salmon Bake with Pecan Crunch Coating

This was really great! We are big on Salmon in my house and my normal routine is baking salmon with a sweet raspberry chipotle sauce, because I prepared it the night b4 for myself I was searching for a quick new way to prepare it for them and found this recipe. I had all the ingredients in my cabinet and rather than regular dijon mustard I has a honey dijon blend on hand. I used that using the specified amount of honey and all things remained unchanged. I didn't have time to refrigerate it but it baked up nicely! my family loved it and even the fickle ones asked for 2nds and 3rds. I went back for more myself!

Crumb-Coated Chicken Thighs

This recipe has ease of use with tasty results!I didn't have cumin and I sprinkled original flavor Mrs. Dash seasoning on both sides of the chicken. Tasted great and my family loved it.

Creole Cornbread Stuffing

I really loved this recipe, I tweaked it by using a pinch of cayenne pepper and I was a cup short with the buttermilk so I substituted reg. milk by adding a Tbsp of fresh lemon to sour it. I can easily see myself creating a variation with turkey meat. The cornbread portion of the recipe was good solo as well it was a nice change from the sweet cakelike cornbread I've been eating all these years

Lemon Bundt Cake

This cake turned out moist and delicious because I read others opinions about a potentially chemical taste I became worried. When I did my toothpick test to see if it was ready the uncooked portion tasted chemically. I made 3 other different cakes for my party and never put this one w the others. two days later I figured I taste it before throwing it out. The cake was delicious! With the soda and all I followed the recipe exactly, so I'll go with the majority, it is perfect try it yourself. Oh I didn't even have icing!
