Pickled Beets

Reviewed: Sep. 3, 2013
absolutely perfect! I made it as stated and didn't change a thing. Best pickled beets I've ever eaten. I used the direction "Add several whole cloves to each jar". I didn't measure out 1/4 cloves and split that equally between 10 pint jars. Maybe the reviewer who said there was way too much cloves did that???

Kahlua® Chocolate Cheesecake

Reviewed: May 5, 2013
This was a great recipe - the Coffee Liqueur adds just a subtle flavor which is fine with me. My husband looked up and sheepishly asked, "This doesn't count as cheating on you, does it?" 5++++ stars from him. The only change I would make is to totally mix the chocolate into the rest of the cake before baking - I ended up with lumps of chocolate in spots and the marbling effect isn't a draw for us. I loved that it had no crust and just made it in a souffle' pan as I don't have a Springform pan anyhow.

Chocolate Mousse Cake IV

Reviewed: Aug. 20, 2012
Amazingly good - raves all around. I made two changes (because I didn't have all the ingredients), but I don't think they changed the overall taste at all. The first change I made was to use 6T unsweetened cocoa powder and 2T vegetable oil to sub for the unsweetened chocolate squares. This was better because you didn't need to melt it first. The second was to sub 2C of pre-whipped cream in a can rather than whipping 1C of heavy cream myself. I added it 1C at a time to "lighten" the mix then to make the final mousse. It was so good I may just make that as a quick chocolate mousse and serve it in cups. Oh - and I leveled the tops of the layers before I stacked the cake. It didn't slide around at all on me and the kids loved the pieces I cut off :)

Cornbread Muffins I

Reviewed: Aug. 14, 2012
I was looking for a sweet cornbread recipe. I made it according to the recipe making no modifications. They were wonderful! Just sweet enough - the corn wasn't chewy as some other reviewers noted. They were moist and not dense as some other reviewers noted. Great recipe as it is written.

Pumpkin Parfait

Reviewed: Dec. 20, 2011
I almost never give a bad review, but this REALLY was really bad. It was runny. It never did set. It was no where near sweet enough. It also didn't have enough spice. Maybe a second box of pudding would have made the difference in both sweetness and the problem setting.

So good... I was amazed how sweet it was with no added sugar. Very creamy.

Aggression ( Oatmeal ) Cookies

Reviewed: Apr. 9, 2011
I've made these since I was a kid. Never get around to cooking them though... They only ever get eaten raw. As there are no raw eggs, they are good for that purpose. Since I don't bake them, I just omit the baking soda.

Pineapple Chicken Delight

Reviewed: Apr. 1, 2011
The chicken was very moist and fell apart. The flavor profile was not to our liking. Almost a creole flavor. Maybe I used the wrong barbeque sauce. There are so many variants on the market maybe more specific guidance would be helpful. This was only OK...

Mint Buttercream Frosting With Dark Chocolate Glaze

Reviewed: Dec. 16, 2010
Best frosting ever! I think I'll make a batch and turn them into peppermint patties by making the frosting a bit thick, shaping them, and dipping in a double or triple batch of the glaze. Couple of minor changes. First I used 1/4 the amount of peppermint extract called for as I use candy making peppermint oil. I also doubled the glaze and added 1/4 c powdered sugar (could've used a bit more). I used this to frost the "Too Much Chocolate Cake" on this site. BIG HIT!

Beef or Chicken Enchiladas

Reviewed: Aug. 28, 2010
This was a sound "starter" recipe. I used leftover Ropa Vieja (also from this site) for the beef in the filling. Had I used a beef that was less seasoned it would have been bland. It was close to bland even with this beef. I think if I made it again, I'd double or triple the garlic and cumin. Other than that, it was fanstastic.

Chicken Gravy

Reviewed: Aug. 14, 2010
Ingredients matter! If you use good, quality stock then this will be awesome. If you use cheap stock it won't be any good. I tripled it and used it for chicken biscuits and gravy. I didn't have stock, but used 1T of chicken base and 1T of vegetable base for 6 cups of liquid. (use 1t of each for the original recipe). I also added a bit of garlic powder and dissolved the corn starch in 1C of milk. I used 5 cups water only, which combined with the milk made 6 cups liquid.

Punjabi Sukha Urad Dal

Reviewed: May 21, 2010
This was absolutely delicious! Even my picky eaters loved it. My only change was to use two hungarian green peppers (less hot than other peppers) because my girls don't like it too spicy. I also made my own Garam Masala blend (2 teaspoon ginger, 1 teaspoon cinnamon, 2 teaspoon black pepper, 3 teaspoon ground cumin, 3 teaspoon ground coriander, and 1/2 teaspoon ground nutmeg, 1 teaspoon ground cloves). Mix those well and use amount called for in recipe.

Spicy Chicken Enchiladas

Reviewed: Feb. 10, 2010
This is an awesome recipe! I use the "Ten Minute Enchilada" sauce recipe from this site, but I modify THAT recipe by adding 1/2 small can of tomato paste, 1 ounce of dark chocolate, and trading chicken broth for the water. The modified enchilada sauce gives this recipe a really "authentic" flavor I enjoy.

Yogurt Chocolate Cake

Reviewed: Feb. 6, 2010
Really REALLY dry cake. The cake was NOT sweet either. To top it off, the icing was extremely bitter and I'm a HUGE dark chocolate fan. Will only try again with more sugar and milk in cake batter and semi sweet chocolate in the icing. What a disappointment.

Tarragon-Turkey Soup

Most recipes I find on this site need modified slightly. Not this one. It is perfect as is. Kids loved it. Husband loved it. In our family, that is a true Christmas miracle!!

No Bake Peanut Butter Cookies I

Reviewed: May 28, 2009
This has been a classic in my house for years. For those who's cookies didn't harden, try them again. They need to be "dryish" not super gloppy when you put them on the waxed paper. If they are too wet, just add 1/4 cup or so more oats. I always use regular oatmeal, never quick cook as they seem to absorb more moisture and I don't usually have consistency issues. The sugar can be cut back just a bit too, if you find them too sweet.

Quick and Easy Brownies

Super good, super rich, super easy. The only problem is that the cooking time was almost double. At 25 minutes they were still straight liquid in the center.

Condensed Soup Mix

Reviewed: Oct. 20, 2008
Very awesome alternative when you are out of "cream of" soup. Tastes just the same in a recipe. I prefer it without the basil as it doesn't go in some recipes. Use 1/2 the water if you are using it to replace a canned soup in a recipe.

Wonderful flavor, wonderful texture, all around a great soup. I might add some more rice next time but other than that, I wouldn't change a thing.
