Baked Potato Salad

Reviewed: Aug. 18, 2013
This was just ok. I followed the recipe exactly, and let it rest overnight. I was hoping for more intense flavors, and the salad was generally hard. A little better as it approached room temperature. Perhaps it needs more salt, and should be served not straight-from-the-fridge.

Roasted Garlic Lemon Broccoli

Reviewed: Apr. 7, 2011
I really liked this, and my toddler ate it too, though she said it was spicy. (I think I may have put too much pepper on it.) I roasted for the minimum time because it looked and smelled done, but it was still pretty firm. I'll probably leave it in for the full 20 minutes next time. I also reduced the sea salt and increased the garlic, but not my a whole lot.

Pasta with Roasted Butternut Squash and Sage

Reviewed: Nov. 20, 2010
Great! The only modification I made was to add a can of fire roasted tomatoes with garlic. Not necessary, but a yummy and colorful addition.

Chewy Whole Wheat Peanut Butter Brownies

Reviewed: Sep. 14, 2008
Good - not terribly sweet. I added chocolate chips, and feel this was essential - brownies wouldn't have been sweet at all without them. Nice, dense texture. I substituted almond extract for the vanilla, and wouldn't recommend this. The almond overpowered the natural peanut butter I used.

Old-Fashioned Italian Zucchini Fritters

Reviewed: Aug. 30, 2008
Good, but the zucchini put off a lot of water after I added the egg, flour, and salt. Had to keep adding flour to absorb the excess moisture. Made the fritters a little flimsy, but still tasted good. Nice way to use up extra zucchini!

Mom's Zucchini Bread

Reviewed: Aug. 9, 2007
Very very good - I did, however make some changes that were recommended by reviewers. Increase zucchini to 3c. Reduce sugar to 2c. Replace 1/2c. oil with 1/2c. applesauce. I ended up with a LOT of batter. Made a loaf pan, small bundt cake, and 12 muffins with chocolate chips on top. I'm taking them to work! :)

Zucchini Brownies

Reviewed: Jun. 28, 2007
Incredible! These are wonderful!!! The only substitute I made was to replace the two tsp vanilla with one each of almond and maple extracts, since I was out of vanilla. Moist and flavorful - perfect brownie consistency.

Truly incredible! I used some leftover icing I had from another recipe, but otherwise followed the recipe exactly.

Absolutely fantastic! I made a glaze out of confectioner's sugar, milk, butter, vanilla, and scotch... Tasty! :)

Fantastic! I wouldn't change a thing! I used the sauce from the South Beach Chicken Satay on this site with these, and it was wonderful.

Cinnamon Pecan Cookie Bars

Reviewed: Dec. 18, 2006
I decided to give this one a shot in spite of the quasi negative reviews... The bars did not hold together well and were very dry. They also were not sweet at all. Maybe another egg and another 1/4c sugar would fix it?

E-Z Marinated Swordfish

Reviewed: Dec. 18, 2006
Really good. A bit salty, though. I'd reduce to 1/2-3/4 tsp. of salt.

This was great! I didn't have arugula, so used spinach instead. Good flavor, nice and moist, nice presentation.

A Nice Slow-Cooked Pork

Reviewed: Dec. 8, 2006
Not bad, but we didn't really care for the sherry... I'd cut it in half. Also, I used about half the liquid called for, and still ended up with too much. I made gravy with it, but doubt we'll be able to use all of it.

Truly excellent. I used brown rice and cut the recipe in half. Not too watery, not too dry - just right! Thanks for the recipe!

Shrimp Pad Thai

Reviewed: Dec. 2, 2006
Fantastic recipe. I forgot to buy peanuts and used natural peanut butter instead, and it worked beautifully. I will say that it needs some more liquid - perhaps water or broth. I found the noodles a bit dry in spite of following the soaking/cooking directions exactly.

Really excellent! I even messed up and used an extra cup of water by mistake, and it was still wonderful. Thanks for the recipe!
