Chicken with Tomatillos and Poblanos

This was a great recipe! A couple of things I would do differently for the consistency - mix the pepper and tomatillo mixture in my chopper a few times to make it more incorporated and more like a sauce. Mine was a chunky vegetable mixture. The flavors were great - I had 3 poblanos, 1 jalapeno and 2 sweet bell peppers. Roasting them is a must!!! I also didn't have green onions, so I used 1/2 of a vidalia. I don't use wheat flour, so I dredged the chicken in white bean flour. I don't think it's a necessary step, sauteed chicken would be just fine. Served with black beans (put some poblanos and onions in that, too) and rice.

Spicy Black Bean Cakes

Pretty good recipe! I had to make quite a few changes because of what I had on hand - substituted 2 chipotle chilis for the jalepeno, oats for the bread crumbs, diced red onion for the green. I also microwaved the sweet potato so I didn't have to grate it. I pureed the sweet potato, onion, chili, spices and 2 eggs, then added them to the beans and mashed, then added the oats. I also pan fried them in a little olive oil so I wouldn't have to turn on my oven. The cakes have a smoke flavor from the chipotle. I substituted lemon juice and chipotle for the sauce - I would recommend following the recipe, my sauce wasn't that great. I think these would be great as bite sized appetizers with a dollop of guac and sour cream on them!

Shepherd's Pie

Want to make this healthier? Use natural ingredients! Instead of the soup, use about 1/2 cup sour cream and milk, mix in a TBSP of brown gravy mix, some ketchup and whisk together. Use fresh or flash frozen veggies instead of canned. I used peas and carrots. Sautee onions and garlic with lean ground beef or ground turkey. Season with salt and pepper. Top with real mashed potatoes and dot with real butter. Pack up tomorrow's lunch before serving because there won't be any left!

Amazing Gluten-Free Layer Bars

GFS has (I think) gluten-free butterscotch chips. Ingredients - Sugar, partially hyrdrogenated palm kernel oil, lactose, whey powder buttermilk, nonfat dry milk, coconut oil, artificial colors, soya lecithin, natural and artificial flavors, cocoa powder, salt.

Creamy Lemon Pie

I used crushed pretzels for the crust and had a salty/sweet/tangy pie! Next time, I will double the ingredients to do a really tall pie in a spring form pan. It must have a meringue or whipped topping because the top dries out easily.

Seven Layer Magic Cookie Bars

Excellent recipe, easy to make! Impossible to resist. I did add some toffee chips once, but there is so much stuff in these, they got lost. You can cut the butter a tad.

Swiss White Chocolate Cake

This cake made a very light and airy batter, but it totally fell and each layer was only about 1/2 inch tall. The bottom of the cake was a layer of uncooked "grease". The taste was also off. I bake a lot and this cake recipe is just not right.

Grandma Johnson's Scones

This is the best scone recipe I have found! I was using Pillsbury take and bake scones in my coffeehouse, so my customers were used to really cake-like supersweet scones. I started making artisan scones using this recipe as the base. I did add 1/2 cup of sugar, as the scones weren't quite sweet enough. Chocolate Chips Scones - Add vanilla to sour cream mixture and use mini choc chips. Orange-Cranberry - Add 1.5 Tbsp orange extract to sour cream mixture, zest of one orange to dry mixture and 2 c. craisins. Almond,Cherry, White Chocolate - add 1/2 stick of almond paste, grated, 2 c. dried cherries and 1/4 bag white chocolate chips, chopped to dry ingredients, Lemon-Blueberry - add 2 TBSP lemon extract to sour cream mixture and 2 c. blueberries and zest of one lemon to dry mixture, Apple Cinnamon - Add 3 TBSP cinnamon and 2 c. chopped apples coated in cinnamon/sugar mix to dry ingredients. Top all scones with egg wash and demarara sugar, except apple cinnamon, mix cinnamon with demarara sugar and top.

Chile Verde II

YUM! I used purple tomatillos and skirt steak instead of pork...made 1/3 of the recipe and cooked down the liquid. It was great!!
