Pepper-Honey Cedar Plank Salmon

Delicious! I followed the recipe almost exactly. Left out the bourbon and used only a little over 1/4 tsp cayenne. It was still a bit too spicy as a dipping sauce for my kids but it was PERFECT on the fish. One note about the sauce - it won't necessarily look syrupy in the hot pan but thickens as it cools b/c of the honey so just follow the times listed rather than waiting for it to look thick.

Hamburger Hash

Homemade Hamburger Helper! I used leftover potatoes from a roast, chopped into small cubes. I also used beef broth and some steak seasoning instead of the bouillon and water. Threw in carrots and some chopped collard greens for extra veggies and it was really good! My kids were skeptical but once they took a bite, they were happy.

Fluffy Hot Chocolate - Quick version

Just what I was looking for - a quick replacement for store-bought mix. I scaled down to a single serving and put 2 tsp sugar and 1 tsp cocoa in a mug with 1 cup milk. Microwaved for 1 minute. Stirred in some marshmallows and a little squirt of chocolate syrup and microwaved for 30 more seconds. Perfect for my kids!

Chicken Noodle Casserole

Crockpot variation: I put all the chopped veggies in the bottom of a crockpot, laid whole chicken breasts on top, whisked the flour and spices into some of the broth and poured that over top followed by the rest of the broth, milk and butter. I omitted the cheese and used soy milk and Earth Balance due to a milk allergy, but it was still really good. After about 5 hours on high, the chicken fell apart and I easily shredded it with a fork and knife right in the crockpot. I cooked the noodles and stirred them in right before serving.

Rumbleberry Crisp

Amazing with the following changes: only 1 scant cup white sugar mixed with the fruit and double the butter to 1/2 cup for the topping (actually, I used Earth Balance since I needed it to be dairy-free). I also used frozen raspberry/blackberry/blueberry mix with no problem.

Zucchini Soup II

I made this with dairy-free substitutions and it was still amazing. I used dairy-free margarine and soy milk, then instead of the cream of mushroom soup, I added mushrooms to the vegetable mixture before blending and just increased the milk in the cream mixture by 10 oz and increased the flour and margarine accordingly. Also added some leftover chicken and used the wine - definitely a keeper!

Spaghettini Chicken

Great recipe! I do it all in ONE POT which is really nice. I saute onions and garlic in olive oil with salt and pepper, add the meat (I now use Italian Turkey Sausage instead of chicken) and cook until browned. Then I add the tomatoes, basil, broth and pasta (I use rotini now - easier to eat with a spoon) and simmer until the pasta is done. Then I add almost a whole bag of fresh spinach until it wilts and serve. (don't do the cheese b/c of a dairy allergy). My 2 and 5 year olds love it and my husband and I do to. Tastes great and you can't beat a one-pot meal!
