About this Cook
I am a 28 year old mother of 4, and also a college Sophomore. I am constantly in the kitchen. I consider myself a semi-expert with food. I love to arrange dishes, and successfully bake items. My newest passion is breads. There is nothing more satisfying than sinking your teeth into some fresh baked goodness that YOU created! =] I am also an avid gamer. In my spare time, you can find me carousing Xbox Live. Gamertag: HugzArbiter
My favorite things to cook
Italian, Mediterranean foods, Greek, American, Baked Goods, Breads, Original Creations.
My favorite family cooking traditions
Croatian/Italian meals. My Grandfather was from Croatia, and has handed down recipes to my mother..who hands them down to me. I am now working on my deep south cooking.
My cooking triumphs
My Ciabatta bread that is beautifully crusty on the outside, with lots of air pockets in the middle. =] Or my roasted root veggies with balsamic reduction. MMMMMM.
My cooking tragedies
Ack! Too many to list! I would say my sugar cookies that came out like skeet that would be shot at a range. :(

Easy Polenta with Tomato Sauce
First off, this came out AMAZING! I followed the directions in making the polenta. After I baked it, I left it in the fridge overnight to cool. The next day, I heated up some Olive Oil in a heavy bottomed skillet. I fried the Polenta, and browned all sides. (This polenta fries wonderfully!) Topped with my own sauce, and handmade garlic bread. OmNomNoms! My family gobbled it up. What a great dish!

Creamy Potato Leek Soup II
Wow. Perfect. I have made this 4 times, and every time is wonderful. I do tweak it just a little to my taste, by reducing the bacon by 1/2. I don't want to overpower the taste of the fried leeks. So delicious! Oh, and be sure to rinse your leeks VERY well. I made the mistake of giving them a quick rinse and got sand all in my fried leeks. I had to rinse them and wash off all the bacon-y goodness. =[

Jamie's Minestrone
I've made this about 3 times so far, each with a bit of tweaking. I find that I get the best flavor if I omit 2 cups of the tomato sauce and use 2 cups of V-8 juice instead. I also added a can of drain portabello mushrooms to the soup while it was simmering. I only had white wine on hand, so that's what i used. I also used 1lb of browned ground beef instead of pasta. My husband loved it. Anything that sticks to your ribs is a winner with him. Plus, most of these veggies I got out of my veggie garden! Perfect! I served this in bread bowls and got rave reviews. There was not one drop of soup left. 5 Stars!!
