Enchilada Meatballs

These were yummy! I made them a little larger than called for and served them for dinner with Spanish rice and corn. Definately a dinner we'll have again.

Butternut Squash Soup II

I've never made squash soup before and was pleasantly surprised at how wonderful this turned out. I added some curry as well as nutmeg for a little flavor, but other than that I followed the recipe as it was written. Making it again today to freeze!

Rich Italian Sausage and Potato Soup

This is by far one of the best soups I have ever made! I followed the recipe with 2 minor exceptions. For the italian sausage I used Johnsonville Sweet Italian sausage and homemade chicken stock. I found this soup full of flavor and wouldn't change anything. I like to use the sweet italian sausage because of the basil in it.

Pumpkin Cookies I

Very good cookies. I don't care for raisins and they still turned out moist and nummy. Will make again for sure, thanks for the wonderful recipe!

Bird Seed Energy Bars

These bars are good, I followed some of the other suggestions such as using 1/2 applesauce 1/2 oil and 3 eggs. I also added white chocolate chips and some dried cranberries. I wish I had used a jelly roll pan instead of a 9X13. The bars a very thick and took longer to cook than the recipe stated.

Awesome Chicken and Yellow Rice Casserole

Whatever you do don't leave out the pimentos, it would be pretty bland otherwise. I think I'll try some of the other suggestions, such as adding the vegies later, they lost most of there flavor cooking with the chicken. I didn't find it neccesary to heat everything up in the oven, I just added the chicken and vegies to the rice and made sure it was hot enough that way.

Harvest Rice Dish

What a delightful recipe! Such a nice change to wild rice with the little bit of orange zest and cranberries. I used the ingredients listed but changed the cooking method a little. I sauted the rice, almonds and onions in butter until the onions were done. To this I added the cranberries, orange zest and liquid. To this I also added some chicken breasts, covered and baked for 1 hour. The chicken was nice and moist and picked up a nice flavor from the cranberries and orange zest. I will definately make this recipe again!

Orange Cranberry Biscotti

I've made this recipe twice now and they turned out wonderful both times, the only difference was the choice of orange liquor. The first time I made them I used Triple Sec and the second time I made them I used Grand Marnier. The batch with the Grand Marnier was superior by far. When I make these again I will bake sure to use the Grand Marnier.

Picnic Fruit Punch

Very good punch with a pretty dark pink color. I mixed all the ingredients except the ginger ale the night before the party. When it came time to serve, all I had to do was add the soda. Thank you for a delicious recipe that I will use again!

Frosted Butter Cutouts

Very nice cookie and adaptable! Instead of using vanilla pudding mix I used chocolate, and followed a previous suggestion and added the extra pudding powder to the cookie. I ended up with a mildly flavored chocolate cookie and delicious chocolate frosting. I topped them off with off with "Andes Peppermint Crunch Baking Chips" Yummy! Thanks for the recipe.

Savory Onion Corn Bread

I followed this recipe exactly and thought the sour cream topping was a bit much. It had a nice flavor with the onions, but if I make it again I would 1/2 the sour cream mixture or double the corn bread.

Easy 'Charro' Beans

Nummy! These turned out just delicious. The changes I made to the recipe were minor. After frying the bacon I cooked the onion and sausage in the same pan and then added all the ingredients to a crock pot and cooked on high for 4 hours. I omitted the chili pepper and garlic and added a can of "Fire Roasted Chili Peppers" instead. Thanks for a great recipe!

World's Best Potato Soup

Very good, thanks for the recipe. The only thing I changed was to saute the celery and onions in a small amount of the bacon grease. I also used golden mushroom soup instead of regular cream of mushroom, because it's what I had.

Chicken Chipulos

This is a great recipe that I will use over again! I was looking for something to use up some leftovers and extra cans in the cupboard and this fit the bill perfectly. Since it was a last minute decision to make I had to improvise a little bit. I didn't have quite the right amount of cheddar cheese, so I added some mozzarella to the top and I only had 4 whole grain tortillas, but they really seemed to work well. I think 8 of them would have been too much. The flavor was great using a 7 oz. can of mild fire roasted green chilies.

Banana Bread Cookies

I give these cookies a 5 star rating using some of the suggestions from previous reviews. I used 2 bananas, 1/2 cup white sugar and 1/2 cup brown sugar and added 1 cup oatmeal. They turned out great! If you like a soft cookie, you'll really like these. I frosted half of them with a regular butter and powdered sugar frosting and the other half dusted with powder sugar. I think I like them with just the powder sugar the best, not so sweet.

Easy Sausage Stuffing

Not pleased at all with this recipe. It was very dry. I've got the leftovers frozen (there were lots) so I'll add more broth to help it along. I won't use this one again.

Buttery Carrots 'n' Onions

Very good! My 80 year old parents enjoyed it as well as my 4 and 5 year old niece and nephew. I followed the recipe exactlly, except I used baby carrots (because that's what I had). It didn't change the taste, but I think it would have looked better if I had used larger carrots. I will deffinately use this recipe again, as will my Mom!
