Lemon-Broccoli Rice with Chicken

I see a lot of people stating this recipe is bland. A grocery store short coming, was a blessing in disguise. I could not find the original Philadelphia flavor, so I picked up the savory lemon & herb flavor and reduced the lemon zest to 1 teaspoon, this made the meal so flavorful. I also make my rice with chicken stock to add flavor, but I have also made this with pasta and it was just as good. This was an inexpensive, easy meal and a great go to for busy days. This recipe also freezes ok, the sauce does dry out slightly, so if you freeze it you may want to consider making extra sauce or adding sour cream when reheating.

Firecracker Casserole

I made all 10 servings for myself and my husband, and we ate ALL of it. Not in one night, but as left overs. I followed the most helpful review and instead of using the chili powder, cumin and salt I used taco seasoning. I also used crushed tortilla chips in place of the flour tortilla's, this added a nice crunch to the initial meal. The only problem with the tortilla chips is that they get soggy when you eat the left overs. I might not add any chips next time and sprinkle them on afterwards.

I've made this recipe several times now and you just can't screw anything up! I love that I can add items and it only gets better. I do add less potatoes, and corn because I eat more shrimp and sausage. I just need to get a bigger pot now!

Peppered Shrimp Alfredo

Wow! This is the first recipe that my husband agreed deserved 5 stars. This was easy to prepare, had great taste, made a large serving and I only used 2 dishes! I followed the recipe almost exactly. I did take the most helpful comment's advise and tasted it before adding salt and it did not need it for the Alfredo sauce was salty enough. Thanks for the great addition to my favorite meals!

Meatball Nirvana

I give this recipe 4 stars only because I made two versions of it. I made half a batch following the recipe to a tee and another batch with 1/2lb ground beef and 1/2 lb Italian Sausage. The one with the sausage was excellent and 5 stars! I would also suggest rotating the meatball half way through the cook time, this way it does not get overly browned on one side. Next time I might saute the onion to give it a richer taste. Overall it was a great recipe!

Mouth-Watering Stuffed Mushrooms

OMG! I planned on making these for a party and did my trial run last night. I'm thinking about skipping dinner and making these little morsals my meal :) They were mouthwatering. I didn't change a thing in the recipe and couldn't imagine how to make this recipe any better. I loved the bit of spice from the cayenne.

Broiled Tilapia Parmesan

*Drool* I better buy stock in Tilapia because this recipe is going to be on my menu at least once a week. The only thing I changed was that I added a cup of Parmesan but only becasue my husband needs to belong to Parmesan Anonymous. I can't express enough how good this recipe is!

Roast Sticky Chicken-Rotisserie Style

Wow...I think I could eat ths entire chicken up! I made this in the morning and let it sit while at work. Instead of the oven I used a Showtime Rotisserie cooked for an hour. It tasted as good/better than a store bought chicken rotissarie. (Plus I was really excited about using white pepper!) This one is going into my regulars and I'm sharing with friends :)

Maple-Garlic Marinated Pork Tenderloin

My Husband LOVED this and that is saying a lot since he does not like pork. He went back for seconds and took it for lunch the next day. This was tender and flavorful. I was a little pessimistic about the ingredients meshing, but it was perfect!

Roasted Asparagus and Mushrooms

This a great easy side dish that complimented my main course. I didn't have fresh rosemary :( which I know would make this recipe all the better. I did add red pepper flakes and minced garlic for a little kick

Herbed Chicken Nuggets

This was good. I do agree this was bland because it has no salt. That is all I would add next time. I broiled it a bit to make the outside crunchy. I liked the small kick the red pepper flakes added.
