Quick Camping Pineapple Cakes

what a refreshing change from the standard s'more! The first time I tried it didn't go so well. After following the instructions they burned. So 10 minutes in the embers is just too much. A few minutes on the grate not directly over a flame works very well!!

Angel Chicken Pasta

WOW!!! The family was a little skeptical when they saw the ingredients on the counter but were blown over when they ate it! The only thing I did different was to cook my chicken in the skillet seasoned with some roasted garlic/herb seasoning and set it aside. I mixed the sauce as directed and poured it over the precooked chicken breasts and then baked it for about 20 minutes. Served it with steamed asparagas and Barefoot Chardonay. I took a plate of the leftovers to my neighbor and he devoured it asking for the recipe! Will definately make this again!

Hungarian Goulash II

Made this for a dinner party and got favorable reviews on it. We did all agree that something seemed missing out of it. Still great taste but seems like it could use something more. I used venison stew meat rather than beef. I didn't have sweet paprika so I used regular which was fine since the recipe still had a sweet flavor due to the brown sugar. I also added some garlic. I think next time I'll add more garlic and try using a smoked paprika.

Cindy's Awesome Clam Chowder

Yummy! This was my first time making clam chowder and it turned out awesome! Unfortunately I couldn't find the Leek Soup Mix. So I added garlic, onions, celery and a bit of cayenne to kick it up a notch and add some extra flavor. It seemed a bit thin so I added some potato flakes and that thickend it up nicely. I also used fresh razor clams and bought a bottle of clam juice rather than canned clams. I will use this recipe agin and try it with the Leek Soup mix next time since I have since found a store that carries it.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

YUMMY!!!! I was a little lazy and didn't have time to make the cake from scratch so I used a box mix. But I did make the filling and frosting as the recipe directed. It turned out fabulous and super tasty! Paired it with Barefoot Moscato wine, which really complements the lemon flavors in the cake/filling/frosting.

Chocolate Sandwich Cookies II

I'm giving it 5 stars despite the fact that the filling was a bit gross to me. I had planned on making these for a bake sale at school but didn't give myself enough time & the filling didn't turn out. So I was left with A LOT of chocolate cookies. But they were AWESOME! Soooo soft and chewy even after almost a week! So I halved the recipe the other night, using one box of yellow cake mix and added chocolate chips. Sooooo GOOD! Yellow cake with chocolate frosting is my favorite but I feel like a pig when I make a cake. So doing it cookie style works perfectly for me!

Grilled Garlic Artichokes

We saw grilled artichokes on TV and thought they looked great so I found this recipe. It was a success and my artichoke hating husband has been converted. No more steamed chokes dipped in mayo for this family...lol Although Hubby did not know that the marinade was homemade and asked if I used Italian salad dressing. Obviously I didn't but to save time I do now and it's just as great.

Cordon Bleu Casserole

I really tweaked this recipe. I didn't have ham or turkey. I needed a recipe that utilzed leftover lemon/garlic pork loin. And I'm not a fan of swiss so I used a mixed Italian blend of shredded cheese. I left out the nutmeg and sauted some fresh garlic with the onions. To make it a more filling meal I mixed the whole thing with some bow tie pasta and used french fried onions for the topping instead of the crackers.

Sour Cream Pound Cake

Not quite a traditional pound cake but I had the ingredients and tried it out. Very tasty and easy! I did one batch with chocolate chips which the kids adored! And the second batch I used the zest of one lemon and the juice of half a lemon and about a cup of frozen bluberries and poured into muffin cups. They were a hit with my other Mom friends!

Cinnamon Rolls II

Wow! I made this Christmas Eve and baked them for Christmas breakfast and they were an absolute HIT!! Soooooo goood! The icing wasn't too sweet, the dough was perfect and they lookd beautiful out of the oven! I do like a sweeter filling so I did add a little more brown sugar than what was called for.

Old Fashioned Onion Rings

These were awesome!!! The family LOVED it! I did do a couple things different though. I dipped the onion in the egg mixture first, then the flour, back to the egg and then to the bread crumbs. I made for a better coating that stuck and stayed nicer than the first few following the recipe directions. I also added a roasted garlic seasoning to the flour mix and a little garlic salt to the bread crumb mix.

Emily's Famous Chili

After reading all the reviews the only changes I made was to omit the jalapenos and replace the red bell peppers with green (because the red ones looked yucky at the store...lol)and cut the recipe in half. I also used 1lb. of ground elk meat and two cut up elk steaks instead of standard beef. The result was a thick hearty chili that my husband LOVED and even my picky kids ate it. The omission of the jalapeno made it etable for me and the kids but hubby said he could have used a bit more kick so I'll keep that in mind for next time around. This is definatley a recipe worth keeping! We'll use the leftovers this weekend for chili dogs/burgers! ****added note - I thought I'd save a little time and do this in the crock pot. It was partly a good idea. I say partly because I dumped all the seasonings and such in about two hours before it was time for dinner. The longer it simmers the SPICIER it gets! My poor kids cried and even hubby couldn't eat that batch. So if you decide to do this in the crock pot put the seasonsings in about a half hour before it's time to serve. And another note; this is a wonderful camping recipe! We did this right over the camp fire and threw in chunks of steak from the night before. I just preped what I could at home (dicing the vegies, blending the spices/water and putting it in a container) to make life easier at camp. The leftovers are GREAT on chili dogs/burgers/loaded baked potatoes!!

Simple Salmon Chowder II

YUMMY!!! I read all the reviews first so I too ended up adding a bit of smoked salmon (since my husband smoked a batch over the weekend), I also added a quarter cup of potato flakes and instead of the packaged potoatos I cubed up some baby reds. Instead of the milk and evaporated milk I used the same amount of heavy cream for a good rich flavor. This was scrumptious! Even my picky kids ate it without complaint!!!
