Pineapple Cranberry Relish

This recipe was very easy but full of flavor. Served it for Thanksgiving and everyone just loved it. Even my father in law who doesn't like to break from the traditional cranberry sauce couldn't stop eating it. Serve it in a crystal bowl to make it look extra special! I will be making this again. Thank you for sharing!

Italian Sausage Soup with Tortellini

As I'm writing this, I have a pot of this soup simmering on the stove. My second one in 2 days. My family just loved this Sausage Soup and as soon as they finished the 1st pot I made they requested,no wait, begged me to make a 2nd. They had it for dinner, the lunch the next day and wanted it again for dinner tonight. This is a great low cost and very filling soup, and it tasted GREAT! I added everything it called for. The only change I made is that I used Hot Italian Turkey sausage because we like lots of flavor.I added 2 packages of Tortellini because my son asked me to put in "lots of tortellini please". We all enjoyed this wonderful, flavorful soup and I can tell it will be a favorite in our house. Oh, and the best part is after you open a bottle of red wine to add to the soup, you get to drink the rest! :-) Thanks for sharing!

Portuguese Chicken I

This was a savory recipe. The sauce was a little thin but that was my fault. I used fat free 1/2 and 1/2 instead of heavy cream to cut the calories and 1/2 the butter and replaced it with olive oil. So I added a little more flour. It was still wonderful. Really nice flavor. I doubled the sauce like others suggested as I also added some chicken thighs. My son had 2 big helpings. I will be making this again! Thanks!

Tarragon Chicken Casserole

This was a good dish to make during a busy work week! My family enjoyed it. I cheated and saved more time by buying a ready cooked chicken from the grocery store! I also used fat free 1/2 and 1/2 to cut down on calories. Tasted great! It was super fast to make and something my son and husband (both don't cook) can do without me being home. And for that this gets 5 stars!!Thanks!!

Ratatouille

I really loved this recipe! This was very easy to make and you can make it ahead of time. I was looking for a recipe that would help me get more veggies into my diet and this was it. Lots of flavor. You can really adjust this to your liking. I added some dried seasoning mix I had with dried tomatoes,rosemary and basil. Also used a four cheese mixture. Turned out fantastic! I could eat this everyday and have already made it 3 times in 2 weeks :-). I took some to work for lunch and had people coming over wanting to know what smelled so good! My husband even liked it and he doesn't like eggplant(he asked later what the weird vegetable was). Thanks Lynette for sharing this recipe!

Upside Down Turkey

We BBQ'd our turkey upside down this Thanksgiving for the first time. We usally just BBQ it the "regular" way. The turkey was so tender it almost fell apart. It was wonderful! We will never cook turkey any other way again. Only change I did was I made up some Herb Butter. I mixed chopped fresh sage, rosemary and tyme and garlic with melted butter the night before. I then separated the skin and stuffed the butter between the meat and skin. I put fresh sprigs of the Herbs in the cavity with butter. Rubbed the turkey with olive oil. And on the grill he went. Upside down. I will make this again! Thanks!

Sweet Potato Bake

This was VERY good. Made this for Thanksgiving and had the ones who don't like sweet potatoes coming back for seconds! I left out the pecans as my husband can't eat them, but the topping still came out awesome. I also added a bit of nutmeg and cinnamon to the potatoes. I got requests already for Christmas. Thanks for sharing this wonderful recipe!

Sarah's Banana Bread Muffins

These muffins were awesom! Simple and quick. My husband can't eat nuts so I added chocolate chips instead. Yummy! Also added cinnamon and nutmeg. They didn't last very long. Good recipe. Thank you for sharing!

Baked Parmesan-Crusted Chicken

This chicken was sooo moist and tender! My family loved it! I don't like chicken breast because they always come out dry(maybe it's me?!)I thought I'd try this recipe out because it sounded good and had such a high rating. The flavors were wonderful. What a difference the fresh herbs made. The chicken was bursting with flavor. My son who also doesn't like chicken breast, wanted me to show him how to make it. We all gave it thumbs up! I will be making this often! Great recipe!

Blackberry Cobbler II

Caldo de Res (Mexican Beef Soup)

This was one of my favorite soups growing up. For beef, I use beef short ribs and only use shanks if the short ribs don't have enough meat on them. It gives it a better flavor,but you do need to skim the fat off the soup after it cooks(it's also easily removed after the soup has been placed in the fridge). You need to brown the meat well for flavor before adding any liquid. This is a good Caldo de Res recipe and everyone who loves beef soup should try this at least once.

Chicken Savoy

Humm, this was just OK. I really didn't think it had all that much flavor. I was expecting a flavor burst of some kind by reading the reviews. The chicken did come out moist, but I thought it was lacking something. Sorry, I really tried to like this but,I probably won't make this again.

I really tried to like this recipe. It had a lot of things I like to cook with and sounded yummy. I followed it as written with no changes. I was very disappointed in the flavor. Maybe my expectations were too high. I don't know, but I won't be making this again. Family gave it a thumbs down. Sorry! :-(
