Escarole and Bean Soup
This soup is delicious, much more flavorful than I expected it to be. I made it exactly to the recipe except I used white northern beans instead of navy and left out the adobo seasoning. I have no idea how allrecipes.com calculates this at 226 calories per serving. Chicken broth is 10 cal/serving and beans are 80 cal/serving. Add onions, garlic, and escarole - nothing else - so where do all the other calories come from? I'm calling this a 120-calorie bowl of soup, max. That makes it taste even better! :)

Green Enchilada Pork Chili
I made this with 2lbs of pork tenderloin that I cooked in the slow cooker all day with 1 can of Dr. Pepper, 1 cup f BBQ sauce, and 1 cup of beef broth. I cut the pork into cubes and used it in this recipe. The only other changes I made: I used a 10oz can of green enchilada sauce, and I used beef broth instead of water at the end. I also used 1 tsp of all the spices instead of the varied amounts the recipe calls for (I tend to eyeball my spices, and I like everything HOT so it worked to use more of the peppery spices). In the end I got a beautiful, chunky stew. DELISH! :)

Chicken Breasts in Caper Cream Sauce
I made this for a guy tonight, and I think he wanted to propose to me after tasting it. Seriously. The only changes I made were: marinated the chicken overnight in lemon juice, Italian dressing, mustard, and white wine. I deglazed the saucepan with white wine before making the sauce, and I doubled the amount of cream and capers. Served the chicken with cheesy mashed potatoes and steamed broccoli. This man would not stop raving about the food. I might receive flowers tomorrow just because of this chicken. :) Success!
