Country Fried Steak and Milk Gravy

This was really tasty, and I will make it again. Kids were not thrilled but DH loved it. I will pound out the round steak a bit more next time to make it more tender.

Broccoli Cheese Bake

I found this recipe to be easy and tasty. My fiance is not a huge broccoli fan but enjoyed it, too. My results did not look like the picture; the dish looked less "eggy" and more creamy. The only modifications I made were the addition of garlic, the yolk only of the second egg, and bread crumbs on the top. My casserole was fluffy and savory. I will make this again as well as adapt the recipe for other vegetables.

Thirty Minute Yellow Cake

I used this cake as a base for upside down pecan coffee cake. The result was not fluffy as others described it, but rather dense. I hesitate to say that this is a bad thing because the buttery density is actually quite delicious with the pecan/brown sugar topping. I will definitely use this recipe again. I will use it as written for a dense, simple butter cake,and if I want something lighter to frost, I will add a pinch more baking powder and an extra egg white. This is a good basic recipe that I can play with. I absolutely LOVE that it calls for self-rise flour.

Oat Applesauce Muffins

These muffins were disappointing but the recipe probably has potential. The muffins stuck terribly to the paper and were incredibly bland. If it had not been for the brown sugar topping and raisins that I added, they would have had little flavor at all. I will try them again adding salt, more spices, and substituting half the flour with conventional white flour. I will, again, add the brown sugar crumb topping. That being said, they will get eaten (kids are happy with any baked good) and will be a healthy way to satisfy a morning sweet tooth with coffee.

Lamb Chops with Balsamic Reduction

This was good, but not as good as I thought it would be. I'll admit I did not have the shallots and substituted garlic. Also, I only had beef broth. In all fairness, I will have to try it again as posted. I did, however, add mushrooms and enjoyed the way they caramelized in the balsamic. I will try again and see if I like it any better.

Favorite Corn Bread

Very easy and delicious recipe for corn bread. I cut down on the sugar since I was serving it with a bean soup and didn't want the sweetness. I also substituted curdled milk (vinegar) for the buttermilk. I will definitely make this again, although I will try another reviewer's suggestion and "soak" the corn meal in the milk for awhile before mixing in remaining ingredients. I am hoping that will make the bread a bit less mealy and more tender.
