Strawberry and Lemon Cake Balls for Mother's Day
About this Cook
Both my parents are really good cooks and my mom is a semi-professional baker so I was blessed to have that passed down to me. They love to try new things so we had a lot of variety growing up, not just the same old thing. I love trying new recipes and playing around with ingredients.
My favorite things to cook
Pretty much anything! I love baking especially though!
My favorite family cooking traditions
Don't really have any traditions per se, I did bake for a couple Christmas' in a row for gifts - made cookies one year and muffins the next.
My cooking triumphs
I made a pumpkin cheese cake for the first time for Thanksgiving 2007. It turned out perfect and was a rave! It was requested again for Christmas dinner.
My cooking tragedies
I fell asleep with a batch of cookies in the oven! I woke up a little while later, so I didn't burn the house down, but the cookies sure were done. Luckily it was the last of the batter. I guess that teaches me not to make cookies late at night! Also made a double batch of dough once for bread, and both of the loaves over-rose and I couldn't bake either of them because they became hard and crusty.

Beer Batter Deep Fried Dill Pickles
These are awesome. Makes a lot more batter than needed for half a jar. Used the whole jar and still had batter/flour left over. These were crispy and tasty! Messy to make but worth it! Made with the quesadilla jalapeno dip from this site as suggested by another viewer. Yum!

Tacos in Pasta Shells
These were pretty good! I made some changes to the recipe: used 1 package of taco seasoning in place of chili powder and salt; used manicotti shells because the store didn't have jumbo shells available; used a 28oz. can of marinara sauce instead of the taco sauce (this was plenty - 1 cup is not enough!); used 1 bag (2 cups) of shredded Mexican Blend cheese; and I didn't include the tortilla chips. Topped with sour cream and served with refried beans and Spanish rice. This was enough to feed 4 adults plus have leftovers the next day - all for around $15. A cheap, quick and easy weeknight dinner!

Chocolate Mousse Pie
This is delicious! Light, fluffy and chocolatey! I used 1 cup semi-sweet morsels instead of the bar and added a dash of vanilla and 3 tbsp. sugar to the heavy whipping cream before whipping. I made a graham cracker crust in a deep-dish 9" pie pan and this was the perfect amount of filling for it. Sprinkled with chopped morsels. Will definitely make this again!
