Perfect Baked Potato

Reviewed: Nov. 16, 2005
These are very tasty, but mine weren't crispy at all. They were still delicious, though. I baked mine as suggested the first time and another time I used the microwave. They are very good in the microwave, too.

Peanut Butter Brownies I

Reviewed: Mar. 9, 2006
First of all, don't go by the picture posted with the recipe. It obviously is wrong because there's no cocoa powder in these! Anyway, I baked the brownies for 25-30 minutes like the recipe said and they were way too gooey at the end. I ended up putting them in for 10 minutes longer, but then they were dry. I didn't care for these, sorry.

Absolutely The Best Shrimp Scampi

Reviewed: Sep. 6, 2007
This was a very good recipe! I didn't use Brandy or wine because I didn't have it, but I did squeeze half a lemon in after the spices were ready and added about 4 tablespoons of cut-up butter on top when I broiled it. I will definately make it again, but I might try omitting the flour so it could be more saucy.

Apple Dumpling Cake

Reviewed: Oct. 10, 2007
This is a very good recipe. I used 13 apples (the equivalent to a 3-lb bag) and I think I'd add even more next time. I used the whole cup of oil and I think it was just fine and not oily. I would prefer the dough not to get as crunchy (like actual "dumplings"), but it was very tasty and I will probably make it again.

Chicken Cordon Bleu II

Reviewed: Mar. 13, 2008
This is a very good recipe. I used Black Forest Ham and Swiss, but didn't stuff the chicken breasts as instructed in the recipe. Instead, I simply added the ham and cheese on top and melted it during the last few minutes of cooking. It's a lot easier, saves time, and still tastes delicious. Then I added the sauce on top when the cheese was melted. Thanks for this recipe!

Nacho Cheese Sauce

Reviewed: Mar. 13, 2008
I didn't care for this, but my husband thought it was very good, so I gave it 4 stars. I thought it was a bit bland as written. I was looking for a recipe more like the ones you get at baseball games, sauce with a kick. If I make this again, I'll have to add some spice to it.

Tortilla Rollups II

Reviewed: Mar. 13, 2008
I thought these Rollups didn't have enough flavor. I think adding ome sour cream and Mexican flavoring might kick them up a bit, but I probably wouldn't bother making them again. However, some of my guests did like them.

Tiramisu Layer Cake

Reviewed: Mar. 13, 2008
This cake tasted good, but I think you have to modify the recipe A LOT, as suggested in other reviews. My husband and I agree that we would prefer all THREE layers of cake to have coffee powder added to it. I only put it in two layers, as suggested, but I think the coffee drizzled on top of the layers doesn't give it as much of a coffee punch as real Tiramisu made with espresso. The icing is delicious! Here's a few tips to help with this recipe: --Use 4 teaspoons coffee powder in AT LEAST two layers of the cake. --Use heavy WHIPPING cream. Place a metal bowl in the freezer for a few minutes first and it will whip up great. --I made a mascarpone-like cheese for the filling. I have used mascarpone before, but this substitute worked just as well with ingredients I already had on hand: mix 1 (8-oz) container cream cheese, 3 Tablespoons sour cream, and 2 Tablespoons heavy whipping cream (steal a little from what you'll be using for the frosting) together, then add the confectioners' sugar and liqueur. Hope this helps!

Taco Dip I

Reviewed: Mar. 13, 2008
Everyone always loves this recipe! Try CHEESY taco seasoning instead of regular seasoning to add an even cheesier taste to the dip. I serve mine in a deep pie dish. I don't like it too deep so you can get all the ingredients on your tortilla chip!

Peanut Butter Cup Cookies

Reviewed: Jul. 14, 2008
I wasn't too crazy about these cookies, although I know I am in the minority. I gave the recipe 4 stars because the people at the party I took them to said they were good. They were very easy to make, if you refrigerate the dough and freeze the cups before baking.

Apple Dumplings with Rich Cinnamon Sauce

Reviewed: Jul. 15, 2008
I used a 9x13 pan to bake 4 apples and it affected the baking. Thirty minutes total time was not enough to soften the small Acey Mac apples I used. (It DOES tell you to use a 18x12 pan, but I didn't have that size.) Despite that, I think the sugar/butter/cinnamon was just the right amount of flavor. I made my own dough, eliminated the nuts, and didn't bother with the sauce. I like the taste of the apples to dominate instead and they are definately delicious enough without the sauce. I will definately try this recipe again. Just don't make them in a 9x13 cake pan!

Mondi's Super Simple Chicken

Reviewed: Aug. 24, 2008
This is an excellent recipe. It's very easy and delicious. I used breast tenders and baked at 425 degrees for about 30 minutes using a shallow quiche dish. I hesitated when adding the basil and garlic because I thought it was too much, but I'm glad I didn't because it came out perfect.

Pina Colada Punch

Reviewed: Dec. 13, 2008
This was delicious! Minor changes: I made mine with 15 oz (a whole can) of coconut milk and 3 cups coconut rum. I didn't use pineapple chunks, just pineapple juice. I only used half of a 2 liter of soda, too. It was great. I think it would be wonderful if you followed the recipe as is, too. I placed it in the freezer about 6 hours before our party in a very large mixing bowl WITHOUT a lid (when it was covered it didn't seem to be setting), then took it out and stirred it to smooth it out a bit. We had 5 adults at our game night and we finished the whole bowl! It was enough to have several tall drinks each. Thanks for the awesome recipe!!

Chicken Wing Dip

Reviewed: Dec. 13, 2008
This was very good, but I did make the following changes: I used only 1 package cream cheese mixed with 1 cup bleu cheese dressing layered on the bottom. Then I diced the chicken very small and mixed with the hot sauce and put on top. (If you have Anchor Bar hot sauce available at a store near you, try it! It tastes great and it is supposedly the original hot wing sauce.) I put my dip in a 9X9 pan because I like a thick dip and it was perfect. Thanks for the great recipe!

Guacamole

Reviewed: Dec. 13, 2008
This guacamole was very good. I followed the recipe exactly as written, but I didn't use fresh cilantro. I think that made a huge taste difference. Next time I will use fresh. I also think it needs more garlic than called for, but it's just a matter of personal taste. All the guests at game night really liked it!

Roasted New Red Potatoes

These were good, but I felt like they lacked any superb taste. I think they would be good with added onions, garlic, or something to add more flavor.

Blue Cranberry Sauce

Reviewed: Dec. 13, 2008
This was good, but I think fresh cranberry sauce without blueberries is much better. This left my guests asking "What's that taste in here?" since the blueberries were only slightly noticeable.

Easy Slow Cooker French Dip

Reviewed: Dec. 13, 2008
This was good, but I think it needed a little more flavor and could have been slightly thicker. I used bottom round roast and it turned out very moist. Next time I will add some garlic, some salt, and less broth.
