Corn and Avocado Salsa

I LOVE this salsa!! It's one of my go-to meals actually. I always use a can of corn and I also throw in a can of black beans (both drained and rinsed). I only ever use half a red onion cause I presonally think that the onion taste is WAY too strong otherwise. I let the whole mixture (minus the avocado - since it would brown) marinate for a few hours. When ready to eat, I throw in the avocado (just one) and serve with either Tostitos Lime chips or Black Bean Chips. SO DELICIOUS! I think its a perfect dinner for two. ENJOY!

Breaded Brussels Sprouts

Very quick and easy way to prepare a tastey alternative to plain brussels sprouts with butter. I used frozen brussels sprouts cause that's what I had on hand and I bet its even better when they're fresh! Thanks for the recipe

Portobello Mushroom Stroganoff

Great veggie alternative to the classic stroganoff! I took the advice of others and cut the sour cream to 1/2C and added in a tbsp of Worchestershire sauce. Also sauteed some garlic along with the onion and mushroom. Just the right amount of creaminess without going over the top. Delicious!

Cajun Pasta Fresca

Made a few slight modifications/substitutions: Whole wheat rottini pasta, dried parsley, and Old Bay seasoning. Also added shrimp and sliced zucchini in to cook with the pasta for the last 2-3 minutes. It was delicious!

Baja Bean Salad

Thanks for the recipe! Didn't need the milk and nixed the lettuce. I used non-fat yogurt, organic blue corn chips, and made my own guacamole by mixing one avocado, a dash of salt, about a tbsp of lime juice, and about two generous tbsp of chunky salsa. The meal was delicious!

Carrot Rice

Delicious way to spice up plain rice! I made several changes since I just worked with what I already had on hand: I used brown rice, almonds instead of peanuts, and 1 tsp of ground ginger instead of fresh ginger. I didn't have any carrots so I left that out but I did sautee a chopped yellow onion. Finally, to add a bit of Fall flavor, I added a 1/4 cup of raisins and a dash of allspice. Fantastic!! I'll definately make it again!

Sweetly Spiced Pork

Wonderful holiday dish! I'm not usually one for pork, but... WOW! For the sake of presentation, I kept the pork tenderlion whole (instead of cubing it as the recipe suggests). I cooked it in the oven for between 1-2 hours (you need to monitor it since ovens differ). I also couldn't find any butternut squash so I omitted that completely. Finally, since I didn't want to go out and buy cloves and mace just for this recipe I used Allspice instead. It was fantastic! I'll definately be making this one again!

Spicy Baked Sweet Potato Fries

Who'd have thought that fries could taste so good AND be healthy?! To speed things up, I microwaved each sweet potato for about 2-3 min. (make sure you prick them several times with a fork to let the air out). This allowed me to only have to bake them for a half hour total time. Also, instead of using the spices the recipe called for, I used old bay seasoning (it's all I had at the time - and it's what I'll use from now on!) and everyone loved them! This will be a recipe I'll always come back to.

Bleu Cheese Macaroni

I served this as a side at a holiday party and it was fantastic. Not surprisingly, people who shy away from sharp cheeses won't like this (It has a strong blue cheese flavor - duh!) but if you're up for trying a new twist on the classic mac and cheese, this one is a winner! Thanks for the recipe!

Pasta with Blue Cheese and Walnuts

Nice idea but a bit bland in taste... which surprised me considering the use of blue cheese in this recipe. Maybe I'll try it again but with 1 or 2 more cloves of garlic and a different type of pasta for better texture (perhaps farfalle/bowtie?)

Fall Salad with Cranberry Vinaigrette

I made this for a dinner party and everyone enjoyed it. Despite being a salad it is very hearty and delicious! Like others mentioned, it called for a bit too much vinegar so I think next time I'll cut it in half. I didn't think the endives were necessary either (especially since they're such a specialty item) so if you can't find them at the grocery store, don't sweat it.

Wheat Germ Whole-Wheat Buttermilk Pancakes

This recipe is absolutely delicious! I had no eggs so instead I threw in a banana and a 1/4 tsp of baking powder as a substitute. I don't know how the original recipe is, but the pancakes with my modifications were amazing! Not one crumb was left on any of the plates. The banana flavor was a very nice touch. I'll definitely be making these healthy tastey breakfast treats again!!
