Pizza Dough II

Reviewed: Jan. 29, 2001
The dough is beautiful and tasty. I divided it into 3, and made a 16" pizza. But I think just dividing it in half for a pizza that size would be good too. It just depends if you like thinner or thicker crusts. After I rolled it out and let it rise for 10 or 15 minutes, I prebaked it for about 10 minutes at 350F. That helps keep the crust from getting soggy and you don't have to bake it so long with the toppings, which can easily burn at 425F.

Chinese Restaurant-Style Sesame Chicken

Reviewed: Jan. 29, 2001
You will definitely want to increase the marinade. I used 4 Tblsp of soy and maple syrup, 1 of sherry and 1 of seasoned rice vinegar. Be careful not to toast your sesame seeds too long, or they taste burnt. And you'll want to use more oil, as 1/2 teaspoon is not enough. I used olive and sesame oils.

Rice Noodles with Shiitakes, Choy, and Chiles

Reviewed: Jan. 12, 2001
This dish has a great flavor. I love shiitakes and bok choy! But it's way too many rice noodles. They were a huge sticky mess. I'd recommend using fewer, and adding a little oil to the water you boil/soak them in.

Indian Vegetable Rice

Reviewed: Nov. 20, 2000
I would recommend adding more vegetables, and not adding them until about halfway through the cooking time. Otherwise the veggies are total mush by the end.

Chili Potato Burritos

Reviewed: Nov. 1, 2000
I'd say these could use a little more flavor. I added a can of black beans and half a bunch of spinach for some protein and added nutrition.

Lentil Soup

Reviewed: Oct. 19, 2000
We had this soup for our souper Wednesday staff lunch and it was a big hit. We did't use the spinach or tomato, but it was still delicious!

Red Lentil Curry

Reviewed: Oct. 11, 2000
Although different from other dahls I have made, this one is good. I added some cardamom and served it with spinach and tomatoes.

Aloo Phujia

Well I wouldn't say these potatoes are spicey. But they're good. I added a little more salt to bring out the flavor. I served them with Moraccan Chicken, which was a great combination.

Pan-fried Polenta with Corn, Kale and Goat Cheese

Reviewed: Sep. 14, 2000
Yum! I didn't have time to make the polenta, so I used store bought polenta and mixed in fresh corn, garlic and basil. Goes great with sweet potatoes.
