Penne Pasta with Spinach and Bacon

Mmmmmmm... we really liked this, including the two-year old and the not-a-big-veggie-person husband. I loved how simple it was to pull together! I used a bit more bacon than was specified and substituted turkey for regular but, other than that, stayed true to the recipe. I'll make it again soon.

Banana Banana Bread

My only problem with this (and the recipe's merits far outweigh it) was being fooled by the "clean toothpaste" check. In other words, my toothpick, inserted in multiple places in the loaf, came out clean loooong before the bread was done. But once it finally did get done, it was delish!

Ten Clove Garlic Marinade

Utterly scrumptious. We marinated boneless chicken breasts and chopped them up to serve as the main topping on assemble-your-own salads. Our guests agreed that the chicken tasted marvelous.

Blonde Brownies III

Ooooooo, these are one of my new favorites. Following others' recommendations, I added 1 tsp. vanilla, reduced the flour to 2 and 1/2 cups, and baked in a 9x13" pan. I added some chocolate and white chocolate chips, and once a few butterscotch chips (skipped all nuts), and voila! An absolutely addictive dessert.

Pecan-Oatmeal Pancakes

So yummy! Sort of like eating soft, airy oatmeal cookies with maple syrup. I used old fashioned oats, half whole wheat flour, and added some cinnamon, nutmeg and a healthy sploosh of vanilla. The cakes came out with a lovely, delicate flavor and a wonderful, chewy texture. I would eat these at least once a week if I could. The only downside is that these didn't meet my two-year old's definition of "pancake"--I think she was expecting the fluffy, melt-in-your-mouth variety.

Fluffy Pancakes with Wheat Germ and Applesauce

Delish! I stayed as close as I could to the recipe, though I had to use some vanilla yogurt + water instead of milk (last of the milk was sour--ick!) and white whole wheat flour instead of regular. But the resulting pancakes were delightful! I'll make them again soon.

Ginger Glazed Mahi Mahi

Today was my first time making Mahi at home, and this recipe was super. Delicious, reasonably quick, easy. My husband, who is a fairly recent fish-convert and decided non-foodie, pronounced it "delightful"--unheard of high praise!

Sausage Scramble

Yummy. Did the potatoes myself and seasoned them with salt, pepper, chili powder, garlic powder. Removed them while I cooked the sausage and then added everything back in (no peppers). Cheddar cheese mixed in and some parm sprinkled on top. Hubby and I both smacked our lips!

Seasoned Turkey Burgers

Very nice. I used our little George Foreman and cooked each batch for 6 minutes. I got 6 medium and 2 small burgers out of the 1.5 lbs of meat. My husband was a bit skeptical about the whole turkey burger thing, I think, but he later said he liked them and would happily eat them again. And my two-year old ate hers all up and pronounced it, "lishhhhhh-us."

Simple Southwestern Chicken Salad

Made this for an easy dinner last night and everyone loved it--including my two-year old. I used three chicken breast halves and shredded them instead of cubing. Used just a tablespoon or so less than a full taco seasoning packet, along with low-fat mayo. Enjoyed the salad wrapped in flour tortillas with lettuce and a drizzle of ranch dressing. This is a keeper.

Hamburger Quiche

We enjoyed this dish very much! Hearty and savory. I took the time to grate my own potatoes for the crust and fry up my own (turkey) bacon. We'll be making it again!
