Hamburger Quiche

We enjoyed this dish very much! Hearty and savory. I took the time to grate my own potatoes for the crust and fry up my own (turkey) bacon. We'll be making it again!

Chocolate Layered Pie

I made this twice over Thanksgiving week, and it got raves from everyone. I did adapt it slightly with some of the modifications suggested by others: 1 and 1/3 cup milk in the pudding, Heath bits sprinkled over the cream cheese layer and on top of the pie. Plus a few more pecans in the crust than were called for. I give it four stars only because I prefer dense, heavier desserts, and this is definitely on the fluffy side with all the whipped topping. But that's clearly only a matter of my personal preference, since my friends all asked for the recipe!

Satiny Chocolate Glaze

This is a scrumptious cake topping, but I have to agree with one of the other reviewers--it's not what I was thinking of when I searched for "glaze". It's really almost too thick to pour, and I ended up using a knife to help spread it over my cake.

Easy Grape Salad

We made this to take to another couple's house last night, and everyone gave it two thumbs up. It was perfect for a night when we all wanted something sweet, but light. Like another reviewer, I added a few mandarin organges. I also used sliced instead of slivered almonds so that we got a little bit of the nut-skin and its yummy flavor, and I taosted them in the oven for 7 minutes at 250 F. Our friends said that the almonds "made" the dish.

Butter Brickle Frozen Delight

This went over quite well when we had company last night. Might be a tad too sweet for some palates, but no one at my house left much on his/her plate! Note: I froze this for 4+ hours, and it still wasn't set as much as it should have been. I'll definitely make it a day ahead next time.

Ruby Apple Salad

This was certainly lovely to look at, but it's not as sweet as the gelatin salads I enjoy most. I wasn't crazy about the cinnamon flavor, and all of the crunchy textures--apples, celery, nuts--weren't my favorite either. But I did receive several compliments when I took this to Thanksgiving dinner, so maybe it was just me. Then again, I had plenty left over, so maybe it wasn't.

Banana Banana Bread

My only problem with this (and the recipe's merits far outweigh it) was being fooled by the "clean toothpaste" check. In other words, my toothpick, inserted in multiple places in the loaf, came out clean loooong before the bread was done. But once it finally did get done, it was delish!

Oatmeal Peanut Butter Cookies

I'm not a peanut-butter cookie fan, but these were quite good. And my husband loved them. Best eaten a day or so after they are baked, in my estimation. (I used half a cup of whole wheat flour, just because I try to sneak it in whenever possible.) Next time I'd try old-fashioned oats instead of quickies.

Candy Cane Fudge

I was somewhat skeptical, but this was very nice! My teenage (boy) cousins loved it and went out of their way to tell me so (which was impressive, I thought). Unfortunately, I wasn't able to achieve the pretty swirls, but some extra crushed candy saved the day.

A Hearty Green Bean and Sausage Casserole

I tried this because I have had it with the traditional green bean casserole. This was a nice alternative. I used reduced sodium cream of chicken soup instead of mushroom. My grandfather couldn't say enough about this.

Very, very good. Raves reviews from our friends who were over for dinner. Followed the recipe strictly, except I used butter for the shortening and really didn't knead the dough (just used my hands to finish mixing it). The only way they could have been better is if they'd been a tad more flaky.

Pecan-Oatmeal Pancakes

So yummy! Sort of like eating soft, airy oatmeal cookies with maple syrup. I used old fashioned oats, half whole wheat flour, and added some cinnamon, nutmeg and a healthy sploosh of vanilla. The cakes came out with a lovely, delicate flavor and a wonderful, chewy texture. I would eat these at least once a week if I could. The only downside is that these didn't meet my two-year old's definition of "pancake"--I think she was expecting the fluffy, melt-in-your-mouth variety.

Simple Southwestern Chicken Salad

Made this for an easy dinner last night and everyone loved it--including my two-year old. I used three chicken breast halves and shredded them instead of cubing. Used just a tablespoon or so less than a full taco seasoning packet, along with low-fat mayo. Enjoyed the salad wrapped in flour tortillas with lettuce and a drizzle of ranch dressing. This is a keeper.

Penne Pasta with Spinach and Bacon

Mmmmmmm... we really liked this, including the two-year old and the not-a-big-veggie-person husband. I loved how simple it was to pull together! I used a bit more bacon than was specified and substituted turkey for regular but, other than that, stayed true to the recipe. I'll make it again soon.

Seasoned Turkey Burgers

Very nice. I used our little George Foreman and cooked each batch for 6 minutes. I got 6 medium and 2 small burgers out of the 1.5 lbs of meat. My husband was a bit skeptical about the whole turkey burger thing, I think, but he later said he liked them and would happily eat them again. And my two-year old ate hers all up and pronounced it, "lishhhhhh-us."

Ten Clove Garlic Marinade

Utterly scrumptious. We marinated boneless chicken breasts and chopped them up to serve as the main topping on assemble-your-own salads. Our guests agreed that the chicken tasted marvelous.

Blonde Brownies III

Ooooooo, these are one of my new favorites. Following others' recommendations, I added 1 tsp. vanilla, reduced the flour to 2 and 1/2 cups, and baked in a 9x13" pan. I added some chocolate and white chocolate chips, and once a few butterscotch chips (skipped all nuts), and voila! An absolutely addictive dessert.
