Thai Style Shrimp

My son, home from college for the summer, made this for us last night. I am not familiar with Thai food enough to recognize authenticity of a recipe, but this was a wonderful dish. The flavor was amazing. All of the ingredients stood out, but none overwhelmed the dish. There is a little bit of heat, but not to pronounced. He served this over rice noodles. We were thinking it would also be good as a soup if we upped the ingredients for the broth. Kind of a Thai flavored bisque. We were not sure how pastey it should be, but pulsed this a few times in the processor and made sure that the "paste" was cooked through before adding the shrimp. Be careful not to brown the garlic. Great dish and did not take a lot of time to prepare.

Imitation Crabmeat Salad

After reading all the reviews, and needing to double the recipe for a chuch social, I used 2 lbs. of imitation crab meat, doubled the seasonings and veggies, but kept the dressing as is. I also added about a tablespoon of Old Bay seasoning, (a necessary ingredient in any crab dish served in MD.) This was a hit. All of it was eaten, although I think my husband ate most of it!

Key West Chicken

Everyone in the family loved this one. We are all pretty much "chickened out", so I'm always looking for a new way to present this meat. We did not grill out since, of course, it was raining, but I added a couple of drops of liquid smoke to the marinade and cooked on the indoor grill. Really good!

Lobster Bisque

I have made this bisque several times, now. The changes I made were mostly from reviewer Michi's Oct. 2003 review. The only other change I made was to add some sherry to taste. You can not have a good lobster bisque without sherry. I have also made this using the imitation seafood combos that are a lot cheaper and it was great. Oh, and I use seafood stock or clam juice instead of chicken stock. Sounds like a lot of changes, but really the base recipe is very good and the joy of cooking is to make it like you like it. Lobster Bisque

Tartar Sauce IV

My husband, the tartar sauce critic, made this sauce last night and loved it. We have been looking for a good recipe for years. I think the onion is what makes the difference. We did not have any lemon or dill pickles, so used dill relish and a little of the relish liquid. It was great. Be sure to finely dice the onions and let the mixture sit for a while so the flavors meld. Thanks for the recipe.
