Extreme Banana Nut Bread 'EBNB'

Reviewed: Apr. 28, 2013
This recipe is great! Easy to assemble, and baked beautifully. The only changes I would make would be to reduce the salt to 1/2 tsp. I also added 1/2 tsp cinnamon, and 1 tsp vanilla. The bread is moist and delicious. Will definitely make this again in the future!

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Nov. 13, 2012
I found this recipe years ago, and have been making it ever since! I make this cake every year for Thanksgiving and Christmas, and my family LOVES it. I did change a few things: 1. I beat the eggs seperately, then gradually add the oil....whisking until light in color. Then I add the pinapple, carrots, and nuts, and mix. I mix the flour, sugar, and spices together in a seperate bowl, and gradually add to the wet mixture. I find this makes for a lighter, fluffier cake. 2. For the icing, I use 1 stick unsalted butter, and 1/2 "brick" of cream cheese. Makes for a lighter, creamier icing. Also, because of the pineapple, this cake MUST be kept refrigerated...the moisture from the pineapple will make it go bad quickly if not kept at a cool temperture...

Three Cheese Garlic Scalloped Potatoes

Reviewed: Sep. 16, 2006
this recipe is so easy, and so good it should be outlawed! I've made it several times since I found it, and every time it has been a total success. If you are a scalloped potato fan, then this is the recipe for you! Quick and easy tip...the last few times I made it, I used a mixed blend of shredded cheese (the pre-bagged mixes from the grocery store), and it worked out great.
