Whole Wheat Pumpkin-Applesauce Muffins

Fresh Tomato Salsa

This is now my go-to salsa recipe; we are done with the jarred stuff. I threw it all into the food processor and it was done in 30 seconds. I made two changes, based on the reviews I read: I added a clove of garlic and reduced the number of peppers to two (although I might do three next time.)

Mini Poppy Seed Loaves

These are so good! They are not too sweet, but still have a lot of flavor. I forgot to add the vanilla and almond extract to the first two batches I put in the oven and they still turned out great. I just added it to the last bit of batter in the bowl, and I'm sure those will turn out great as well.

Zucchini Brownies

These are really good! My five year old has decided that they are "the best brownies EVER!" I did add more water when I was mixing, because my batter was really dry. I just added a little bit of water at a time, until all of the flour and cocoa was moistened. I also didn't put frosting on them, although I might next time. I have to admit, I wasn't very thrilled with them on the night that I made them, but I had one the next day and changed my mind. These are great!

Zucchini Corn Fritters

These are SO good. I made a few changes to the recipe and everyone loved them. I only added a tablespoon or so of sugar, because a half cup sounded like way too much and I wasn't going for a sweet taste anyway. I also left out the cheese, used canned corn instead of fresh and added a couple of handfuls of baby spinach, chopped into small pieces.

Luscious Buttercream Frosting

The best buttercream recipe I've found. The only change I made was to add an extra teaspoon or two of vanilla and a bit of extra powdered sugar to help it keep its shape when I piped it onto the cake. I usually don't like icing and just scrape it off when I eat the cake, but this is really good.

Extreme Chocolate Cake

This cake is awesome! Very moist and chocolatey. I was kind of scared to bake it when I saw how thin the batter was after adding the boiling water, but it came out just fine. I used a different icing, but will be trying the one mentioned in this recipe next time. I especially like this for cakes baked in shaped pans, because the texture is kind of dense and it holds its shape well.

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are awesome. The first time I made them I didn't think they seemed completely done at the end of the recommended time, so I left them in the oven longer. I made them again and only baked them for the time stated in the recipe and they are turned out perfectly. I also added coconut and chopped pecans the second time. This is probably the only chocolate chip cookie recipe I'll be using anymore.

Cinnamon Raisin Bars

These are really good! The only change I made was to add cinnamon to the raisins as they were cooking and to use half white flour and half whole-wheat flour. I think that next time I'll halve the amount of icing, because I didn't even use all that the recipe made and I still thought it was too much.

To Die For Blueberry Muffins
