Lemon Curd

Oh my holy goodness. This is heaven on a spoon. I want there to always be a jar of this in my refrigerator. I actually canned this recipe and plan to include it in a lemon-themed gift basket (homemade lemon handscrub, lemon-thyme salt, etc.) for several Christmas gifts. So glad I had a little leftover for myself! This was super easy. I doubled the recipe and it made 4--1/2 pint jars with about 1/3 cup leftover. I added 2 large lemons worth of zest. Brown Family's Favorite Pumpkin Pie

this pie was delicioso! i took it to thanksgiving dinner and it was a big hit. i added cardamom as well as all the other spices and did a gingersnap crust. the streusel topping was fantastic. this one's a keeper!

Eggplant and Pepper Parmesan Sandwiches

Perfect for a picnic! I like to dip the eggplant slices in italian bread crumbs and bake. Also, add spinach for even better nutrition.

Chocolate-Covered Cherry Cookies

This is now a staple recipe of mine-- and a Valentine's day tradition. I made them for a bake sale and my grandmother bought ALL of them because she loves them so much. They are so easy and the flavors blend so well. About to make a batch right now...

Texas Caviar with Avocado

Liked this recipe, but I wonder if it would be better warm? Be sure to rinse the beans well, or else the colors don't stand out as well. I used this for the "good luck" black-eyed pea portion of a new year's party menu.

Awesome Baked Sea Scallops

These scallops are so tasty! The crispy texture was so light and perfect. My scallops weren't completely defrosted, so they took longer to bake (I make sure they are flaky, or else they taste "fishy" to me), but they still turned out fantastic. This would make a great Valentine's day meal.

Eggplant Parmesan II

LOVED this recipe!! Good way to get my hubby to eat eggplant! I used a 9x9 pan and 1 eggplant, and 1 jar of spaghetti sauce, which was perfect. I salted the eggplant using sea salt, which I would not recommend (very salty). Next time I'll add spinach in the layers as well. Made just the eggplant part again (with regular salt) for a sandwich and it was wonderful. I'm planning on trying to grow eggplant in my garden this year, so this recipe will be a regular.

Pralines, Coffee and Cream Cake

This recipe was excellent, but I preferred some modifications. First of all, I don't think the second time around I would use the icing--the praline topping was enough and I found the icing to be a little salty (perhaps b/c of the cream cheese?)--not worth it. I made a regualar dream whip cake since I wasn't sure if my guests (in-laws) would like coffee flavored cake. The praline mixture was great, but a little to thick on my 9" round cake. Next time, I will just ice the whole cake with the pralines. Another reason for this is that the praline topping gets very hard when refrigerated, but the icing needs to be refrigerated because of the dairy products. Just my thoughts...still a great recipe.

Mango Cardamom Bread Pudding

This dessert was excellent. I cut down on the milk the first time because I like my bread pudding on the dry side. I also baked it in a loaf pan and it turned out great. I loved the mango taste and made a simple vanilla sauce to go on top. This was so easy and tasty--it will be a regular dessert in my house.

Moroccan-Style Stuffed Acorn Squash

I made this dish today for a friend who is vegetarian and made enough for my husband and I as well. It was AMAZING!!! I loved the sweet and salty flavor. I discovered acorn squash recently at a local restaurant and have been hooked on it. I made the recipe exactly the way it is, except I added some cinnamon. Although it was great as-is, I might add some nuts next time as well.
