Champagne Shrimp and Pasta

Reviewed: Feb. 16, 2008
DELICIOUS!! This recipe was super easy and so so good. I used extra mushrooms and tomatoes, and added fresh garlic to the mushrooms. The sauce didn't thicken as much as I would like so I added a handful of grated Italian cheese and it thickened right up and gave great flavor. Added fresh basil to the pasta. This was awesome!

Baklava

This was great! A bit time-consuming but the end result was worth it. I used 1.5 times sauce and next time will double it. The top layers were not as saturated as I would like :)

Gramma's Apple Bread Pudding

Reviewed: Aug. 4, 2008
This was really, really good... I could have eaten the vanilla sauce by itself :) I omitted the raisins and just used raisin bread instead. Quick, easy, and delicious!

Fresh Southern Peach Cobbler

Reviewed: Jul. 23, 2008
This was so delicious! I used 3 very large peaches (seriously, they were huge) and kept the other amounts the same... baked in an 8 x 8 baking dish and had just enough topping. I love the cobbler part so if I were to use a larger dish it would definitely need to be doubled. SO yummy!!

Chicken with Green Peppers in Black Bean Sauce

Reviewed: Jul. 23, 2008
Made as written, aside from adding a bit of heat (Sriracha)... super easy to make and tasted awesome ! The chicken was very tender and there was plenty of sauce for the dish. This is a keeper :)

Best Carrot Cake Ever

Reviewed: Jun. 25, 2008
Soaked the raisins in warm water, but otherwise made as directed and it was perfect! I saw there were several reviews about how the cake was too dense... My preference is that a carrot cake should be heavy as opposed to light and airy. The cake was definitely dense but I wouldn't say it was oily. I think it was perfect as is. Thanks for the great recipe!!

Sarah's Applesauce

So tasty! I used 4 packets of splenda instead of the sugar and less water (just eyeballed it). Was really great served warm w/ jerk pork.

Made as written... I thought they were perfect, the boyfriend says more sugar. Maybe next time I will try to make them a tad bit sweeter.

Low-Fat Blueberry Bran Muffins

Reviewed: Apr. 8, 2008
These are great! Very impressed in this recipe, as I have tried a few other healthy muffin recipes and they are typically pretty dull. I used eggbeaters in place of the egg and Splenda brown sugar mix instead of regular... turned out great. My new favorite healthy recipe!

Apple Crisp II

Reviewed: Feb. 16, 2008
This recipe was super easy and my boyfriend loved it! I modified slightly based on other reviews... I used 5 gala apples and tossed w/ the sugar mixture (1/2 brown and 1/2 regular) before hand. The apples were so juicy NO water was needed. I baked in an 8 x 8 square dish w/ the regular amt of topping for 40 minutes and it was perfect. Delicious w/ Vanilla bean ice cream!

Fat-Free Vegetable Soup

Reviewed: Mar. 11, 2008
This does lack a bit of flavor, but it's good for a low calorie filling soup. I used frozen hash brown potatoes w/ peppers in place of the potatoes... made 10 large servings for under 100 calories and only 1 weight watcher point.
