Apple Crisp II

This recipe was super easy and my boyfriend loved it! I modified slightly based on other reviews... I used 5 gala apples and tossed w/ the sugar mixture (1/2 brown and 1/2 regular) before hand. The apples were so juicy NO water was needed. I baked in an 8 x 8 square dish w/ the regular amt of topping for 40 minutes and it was perfect. Delicious w/ Vanilla bean ice cream!

Champagne Shrimp and Pasta

DELICIOUS!! This recipe was super easy and so so good. I used extra mushrooms and tomatoes, and added fresh garlic to the mushrooms. The sauce didn't thicken as much as I would like so I added a handful of grated Italian cheese and it thickened right up and gave great flavor. Added fresh basil to the pasta. This was awesome!

Smoked Salmon and Egg Salad

Broccoli and Cheese Brunch Casserole

This is a great basic recipe to use for a breakfast casserole... the flavor wasn't to die for, but it was filling and endless combinations are possible. I used eggbeaters and fat free cottage cheese in place of the ricotta... only used half the cheese and that was plenty.

Cabbage Roll Casserole

Not fantastic, but pretty tasty. Giving 4 stars because w/ minor alterations it is a super filling, low calorie meal. I halved the recipe, used ground turkey, fat free broth, brown rice, and added green peppers. Next time I will use a full 29 oz can of sauce bc 14 oz was not nearly enough, even though I halved the recipe.

Fat-Free Vegetable Soup

This does lack a bit of flavor, but it's good for a low calorie filling soup. I used frozen hash brown potatoes w/ peppers in place of the potatoes... made 10 large servings for under 100 calories and only 1 weight watcher point.

Beth's Spicy Oatmeal Raisin Cookies

Made no changes and thought they were a bit bland, unfortunately. Next time will listen to other reviewers :) Maybe my review was a bit pre-mature as the cookies were much better the next day!! I am a fresh out of the oven cookie taster :) I will use all butter next time, though and a bit more spices!

Not as good as good as I hoped based on other reviews, but still a solid dish that's very easy to prepare. I didn't think there were enough tomatoes or garlic, so next time I will add more!

These were pretty good! I made in olive oil instead of butter for the health aspect. Next time I will use more red onion and more cilantro. I love cilantro and the flavor didn't come through as much as I hoped.

Low-Fat Blueberry Bran Muffins

These are great! Very impressed in this recipe, as I have tried a few other healthy muffin recipes and they are typically pretty dull. I used eggbeaters in place of the egg and Splenda brown sugar mix instead of regular... turned out great. My new favorite healthy recipe!

Southwestern Lasagna

This was pretty tasty! I changed a few things to make it healthier... ground turkey, FF cottage cheese, eggbeaters, and a just a small amount of reduced fat cheese. Also, I layered the tortillas then cottage mixture, then cheese, then meat and repeat. I like the torillas at the bottom so it sticks together better.
