Crustless Spinach Quiche

Butterscotch Drops

Meh. I really wanted to like these, but they were not good. I used generic cornflakes; perhaps that altered the taste? No one ate them, not even my ever-hungry sons. :(

Slow Cooker Mashed Potatoes

These turned out fantastically for Thanksgiving! I hosted this year at 8 mos. pregnant and had our sides in 3 slow cookers. This recipe was in one of them. At first the family was a little dubious, but everyone loved them! Thanks for this great recipe for someone who needed to take things more slowly this year. :) Oh, and they turn into FANTASTIC potato soup with a little leftover half and half, leeks, and chicken broth.

Soft Christmas Cookies

Absolutely excellent. The children were able to roll out the dough and cut out the shapes easily. These also tasted great! Perfect cookie exchange recipe.

Judy's Strawberry Pretzel Salad

The pretzel crust was great, but the cream cheese layer was extremely sweet. This was too rich for me and the kids wouldn't eat it (!). I might try this again and use Splenda instead of white sugar to see how it turns out. It did not keep well in the fridge overnight.

Amish Meatloaf

This was absolutely fantastic and the kids and husband went wild over it. Spiced perfectly. Froze very well. I used less expensive ingredients- $1 butter crackers from Dollar General and 70/30 ground beef and it still turned out just beautifully. By the way, I learned on the hillbilly housewife site about rinsing ground beef to lower the fat content, which always saves us a lot. This was a terrific everyday recipe that allows us to save up for more expensive recipes at other times. Loved it!!

Hot Dog Noodle Casserole

This was a great way to induce our children to eat spinach! I was pleased with how much healthier this casserole was than the other "hot dog casserole" recipes I have seen. It was very good but I felt like it was missing something. It was nice, bland comfort food, but we like things that are a little spicier. It kept extremely well in the freezer. Thanks for sharing this recipe and I would love to see more experienced cooks comment on how to bring a little more taste to the spinach lower half of the casserole. I used frozen spinach- perhaps that was the problem?

Easy Mac and Cheese Muffins

This turned out ok, but probably would have been fabulous if I hadn't used my own homemade breadcrumbs (I overtoasted the bread!). The muffins were very cheesy and rich. Our children really loved them and they were even better as leftovers.
