Vegetarian Kale Soup

Reviewed: Jan. 15, 2012
Great vegetarian recipe! I wanted to cut down on the carbs and up the fiber, so I halfed the potatoes, tripled the kale, and doubled the tomatoes and it came out wonderful.

Bean Soup With Kale

Reviewed: Sep. 8, 2011
VERY good. I did as one of the reviewers recommended and did about 15 min in the pressure cooker to meld the flavors, and it came out great. I only wished I'd made some old fashion, salty cornbread to go under this dish. It would have been the perfect compliment to this wonderful veggie stew.

London Broil for the Slow Cooker

Reviewed: Feb. 20, 2011
Great simple recipe that costs next to nothing to feed the family. Next time, I will cook a couple handfuls of egg noodles on the stove to serve under this, as the mushroom soup melts into a gravy that reminds me very much of stroganoff.

Fast and Friendly Meatballs

Reviewed: Oct. 28, 2010
Not bad for a very basic recipe. It didn't quite have that classic meatball taste though. Next time I'll add fennel to get that flavor. I didn't have turkey on hand, so I used beef, and I only had plain breadcrumbs, so I added my own italian seasonings into it.

Tater Tot Casserole II

Reviewed: Oct. 6, 2010
My husband LOVED this. I would give it a five star rating for that alone (he's picky), but I thought the recipe as written, putting all tots on the bottom and then sauce on top, was less than desirable in the end. The tots at the bottom of the dish got no "love" from the above sauce that stayed put on the top, so they were very bland. However, I will try this recipe again, using frozen hash browns instead of tots and then MIXING the gooey mixture with the potatoes before cooking.

Classic Macaroni and Cheese

Reviewed: Oct. 3, 2010
My husband doesn't like mac & cheese in general, but he loved this recipe. I'd been searching for a good home-made recipe for years, and tend to find most either not cheesy enough, or just plain bland. But we both loved this one! I altered the recipe slightly, using shredded cheese, adding an extra half pound of cheese and adding an extra can of evaporated milk. I cooked for 45 minutes on 350. Any hotter and the top will definitely burn. Enjoy!

Chicken Pot Pie Soup

Reviewed: Sep. 23, 2010
Great classic tasting Pot Pie Soup. Very easy to make and very quick. I top mine with five Pillsbury Frozen Buttermilk Grands Biscuits (not canned) instead of working with a cracker crust. It bakes up beautifully every time and the biscuits always give that nice salty crunch on the top.

Mushroom Lentil Barley Stew

Reviewed: Aug. 24, 2010
Have made this twice now. The first time was good, but missing a little something. I subbed beef broth for veggie broth on the second time around and used Italian Seasoning instead of summer savory and liked it better than my first outing with the recipe. I've also found that it tastes MUCH better on the second day.

Slow-Cooker Corned Beef and Cabbage

Reviewed: Mar. 18, 2010
EDIT: LEFTOVER IDEA!!!! We didn't have any meat left over, but had a lot of veggies and broth. So the next day I put it all in a pot on the stove, added about 4 cups of water with about 1/3 a jar of beef bullion and about a tbsp of oregano. I let that come to a boil then added the other half of the cabbage left over from the original recipe, and it was AMAZING! I served it all over a basic salty (not sweet) cornbread. _______________________________________ A really good basic Corned Beef and Cabbage recipe. No frills, but very classic tasting. I made this for a St. Patty's Day Dinner Party and between 7 people, we ate nearly 5lbs of the corned beef, so I'd say it was a pretty big hit. :) Thx!

Ham with Honey and Brown Sugar Glaze

Reviewed: Dec. 25, 2009
Wonderful glaze - took me a lot longer than 10 minutes to thicken though. I added a little bit of marachino cherry juice to the mixture as well, then stuffed the ham with pineapple pieces and cherries before glazing. My husband says this is the best ham I've ever made. :)

Cornucopia

Reviewed: Nov. 28, 2009
This was the star of Thanksgiving this year. No one could believe I'd made this. Makes a great hostess gift! My only suggestions would be to WORK FAST! As the bread dough comes to room temp, it starts to sag and gets really hard to work with. Also don't use the egg to affix each piece of dough to the next, just pinch it together. The egg actually makes it more slippery. Also, once it's out of the oven and cool, pull out the tin foil and bake again for about 5 minutes (covered with foil) to dry out the inside. Good luck!

Uncooked Banana Pudding

I brought this to a party, and it was the crowd favorite. I highly recommend this VERY easy dessert. I was initially a bit skeptical of the sour cream addition, but man o' man was it good. Thank you!

Shepherd's Pie

Reviewed: Aug. 7, 2009
I'm going to give this recipe four stars, mainly because I altered it a little bit. But it wasn't bad at all. I used ground Turkey meat instead of the beef it called for. (Wish I hadn't - the texture just wasn't as good as ground beef) I also used frozen veggies (peas and carrots) the way some of the other reviewers did instead of canned. And, then to save time, I used instant potatoes. Surprisingly, no one could tell that the potatoes weren't homemade. So I would definitely recommend the short cut if you're in a hurry. One last thing to mention, this makes a LOT of food. Make sure you have a big enough family to eat it, or plan on eating Shepherd's Pie for a few days after making it. :) Thanks for the recipe!

Cheese Corn Spoon Bread

Reviewed: Dec. 21, 2008
I made this for my company potluck and it was a huge hit. I'm not a huge fan of Swiss Cheese with cornbread, so I used a mild cheddar, and I baked it into the bread instead of topping it. It was amazing.

Classic Fish and Chips

Batter stayed on the fish well and crisped up nicely. The flavor was fine, but was missing something. Next time I'll add half milk and half beer. Other than that, this is a great recipe!
