Cranberry Pistachio Biscotti

Made this last year and got rave reviews--it is an excellent recipe. I just bought unshelled pistachios so I can make this again for Christmas.

Cherry Rum Balls

I LOVED these! I've also used Amaretto and Jack Daniels in place of the rum and they turned out great. One bit of advice: Use disposable gloves when rolling the balls -- it's more sanitary and doesn't make such a mess.

Pear and Gorgonzola Cheese Pizza

My husband (who was very unsure of this unusual pizza) and I loved it! Great sweet/savory combination. I used cornmeal under the crust (for crunch and to keep it from sticking to the pan) and pre-baked it for 6 minutes. I also rubbed a garlic clove on the crust and brushed it with olive oil before adding the toppings. Great pizza! :)

Cheesy Polenta

This was my first attempt at Polenta and it turned out great! Perfectly seasoned and the cheese was a yummy addition. I poured it into a loaf pan lined with plastic wrap to set up. I sliced it into 1/2 inch slices and lightly breaded it and fried it in olive oil and topped with a vegetarian chili -- SO good! Definitely a keeper :)

Pesto Polenta Lasagna

So, so, SOOO good! Easy to make and very filling! I made my own polenta and added ricotta cheese between the layers -- YUM! This recipe is definitely a keeper! :)

Butter Chickpea Curry

Excellent Indian curry! I made this for dinner last night and my husband rated it a '5' :) I substituted califlower for the potatoes and used a low sodium tomato soup -- it came out perfect! I served it on jasmine rice. This recipe is a keeper!

Vegetarian Tortilla Soup

YUM! This soup is so good! I used fire roasted green chilies and added a can of black beans. I topped it with cheese, tortilla chips, avocado, green onions and a squeeze of lime. Definitely a keeper!

Fish Tacos

These were so good! I made the sauce as written and it was WAY too spicy! I would decrease the cayenne/jalapeno by half next time. We had this with a tropical fruit salad and margaritas -- YUM! :)

Beer Cheese Soup V

YUM!!! I diced the carrots/onion/celery very small and didn't puree the soup -- we liked the texture of the vegetables. The soup was very thick -- I used vegetable broth instead of chicken broth and ended up using another half a can to thin out the soup. Served this with Guinness Bread (from this site) and beer margaritas -- yum!

Frosted Pineapple Cookies

YUM!!! I added coconut and chopped macadamia nuts and it made a wonderful, tropical cookie. I zested and juiced a fresh lemon and mixed in enough powdered sugar to make a glaze -- turned out GREAT!!! Will definitely make again :)

Breaded, Fried, Softly Spiced Tofu

I am addicted to this recipe!!! I've made it many, many times. And I didn't even think I liked tofu!! I slice the tofu brick into patties instead of sticks and I add a Southwestern dry rub mix (found at Target) into the breading. I dip it into plain yogurt mixed with curry powder. So, so good!!! :)
