Amazing Sun-Dried Tomato Cream Sauce
This was OK as is, but you have to add seasonings because otherwise it was very bland. To trim some fat and calories I used evaporated milk instead of heavy cream, reduced fat mozzarella cheese and dehydrated sun dried tomatoes which I soaked in warm water to soften them prior to adding to sauce. The seasonings I added in addition to salt and pepper were minced garlic, basil and parsley. I skipped the pine nuts as I didn't have any on hand. The recipe as I modified it actually tasted better over the course of the next few days.

Six Can Chicken Tortilla Soup
Great base recipe, but totally awesome if you make the following additions: 1 10oz can fat free cream of chicken condensed soup, seasonings to your own taste preference - chopped fresh cilanto, cumin, garlic powder, and chili powder. Served with crushed tortilla chips, shredded cheese, chopped green onions and a dollop of sour cream and it was fabulous!!

Elisa's Famous Fudge
Very nice recipe and easy to modify based on types of chips you use. Taste was a little too butterscotch for me, so next time I would use more chocolate and less butterscotch. This fudge was very, very soft and creamy and if you like your fudge that way then you'll love this recipe. I like my fudge creamy, but a little firmer so I would suggest increasing the amount of chips you use to 2 cups. Will make this again, but next time will try using Nestle milk chocolate/caramel chip swirls and semi-sweet chips to make a "turtle" fudge.
