Crispy Rosemary Chicken and Fries

This was really good, but I can't believe it would turn out crispy if you truly cooked it all in one dish. I separated the chicken and potatoes to avoid crowding in the pan - which always leads to sogginess in my experience. I did use fresh rosemary as suggested.

Baked Dijon Salmon

A really nice change from my usual teriyaki glaze. Followed directions exactly except used panko bread crumbs for a little crunchier topping. Excellent flavor!

Apple Pie

This was an excellent pie, 5 stars with a little adjustment. This pie tastes like apples, not super sweet and spicy. I loved that about it. That being said, I will probably slightly increase the spices, and if using really tart apples like I did this time, I'd increase the sugar a bit too.

Perfect Pie Crust II

This made 3 crusts for me, but it was delicious and got rave reviews. I did use all butter since I didn't have shortening, and kept everything chilled - pie plate, rolling pin, etc. This will be my go to recipe from here on out!

Celery Stuffing

makes enough for 20lb turkey at least. used bag of dry bread crumbs from grocery store, needed extra broth. very good - lots of comments as how it was better than stove top.

Herman Reunion Cheese Ball

this got rave reviews from friends at the party - I added a bit of garlic and herb feta that I had, and I skipped the pecans & parsley since I was shaping it as an igloo with olive penguins - but it was great!

Merry Berry Salad

I wasn't impressed with this salad at all - and I had such high hopes for it. I took it to a Christmas party, there was another green salad there as well, but no one hardly touched mine. I found the dressing to be both too sweet and too vinegary, if I were to make it again (which I probably won't) I think I would skip the apple juice concentrate (too sweet) and cut the vinegar to 1/3 cup, and use cranberry juice (not concentrate) to make up the difference in liquid.

Blueberry Coffee Cake I

Ok, I messed up making the cake part of this and completely skipped the whole creaming the butter & sugar part... I cut in the butter to the dry ingredients, added the beaten egg, milk & vanilla and mixed together. It seemed kinda dry (because of my mistake in the prep?) and so I added 1/4 cup sour cream. It turned out GREAT! Love it when a mistake works out. I also added a little of the streusel with the layer of berries.

Beth's Chocolate Chip Cookies

Beth, these were fantastic! I made them exactly as directed and got about 4 dozen crisp/chewy cookies. It was hard to keep track of them because my family kept eating them as they came out of the oven! Even though I'm the only one who likes nuts in my cookies, they all raved about these!

Overnight Coffee Cake

This was amazing! I chose it because it called for sour cream - which I always have on hand - rather than buttermilk, which I never have! I'm so glad I did. It was moist and delicious. I did sprinkle a light layer of huckleberries before the struesel just for fun, and I skipped the icing drizzle, but I got several compliments on it. I love having a new overnight coffee cake recipe!

Boston Baked Beans

I would have give it 5 stars, but it was way too salty. Next time I make it I will eliminate the salt entirely - the bacon adds plenty while cooking, and you can always add a little more if necessary toward the end.

Marinated Grilled Shrimp

This was excellent and easy. the only changes I made were to use balsamic instead of red wine vinegar, and 1 Tbsp dried basil instead of the fresh. Next time I might up the garlic since I love it!

Aimee's Quick Chicken

So easy, and I always have the ingredients on hand! The whole family loved this. I didn't use the whole 4 oz of mustard, just brushed a light coating over each piece. Didn't measure the teriyaki, just drizzled Yoshidas over each piece. Snipped bits of the pre-cooked bacon on top and baked as directed. Put the Parmesan on last 10 minutes. Used thighs and breasts.Really good flavor - I might use more mustard next time, will definitely make again!

Baking Powder Biscuits

Most excellent! I also skipped the rolling out part and just prepared them as drop biscuits. They were so tender and moist, they were yummy even plain. Served them with chili one night, then used the leftovers (had doubled the recipe) for biscuits and gravy. Then I made another batch to go with some soup! It's my new biscuit recipe for sure!

Turkey Soup with Slickers

This was an excellent soup - got great reviews from hubby and picky 16 & 12 yo daughters! It was my first attempt at making the rolled dumplings, but they were perfect. The recipe did make more than needed, so I'd up the liquid or cut the slicker part. I ended up throwing away about 1/4-1/3 of the dumplings and there were still PLENTY in the soup. Will definitely make again!

Brown Sugar Chops

Ok, I admit up front that I made this recipe with chicken breasts rather than the chops - we're not big pork chop fans. It was quite good this way - it's very important not to overcook the meat so that it remains juicy - use a thermometer to keep track. Very simple, I served with crusty rolls, would be good with rice as well.

Apple-Cranberry Crisp

This was great! I subbed huckleberries (local tart blueberry type berries) for the cranberries and it all turned out delicious. the topping was yummy - the pecans really added to it. I did drizzle a couple tsps melted butter over the top before baking to help avoid any dry crust problems. I would also say to allow time for extra baking depending on the type of apple you use and how soft you like them. Just cover loosely with foil and bake until the apples are done to your liking. I'll definitely do this again!
