Lemon Curd Bars

Reviewed: Sep. 8, 2006
The look of these bars was fabulous, absolutely wonderful, I wish I had a camera to submit a photo. Next time I will not add baking soda to the crust, I am telling you I am the queen of bars, and I don’t use baking soda at all in my crusts it makes a big diffrence. I used my own recipe for lemon curd: ( ½ cup lemon juice, 1 teaspoon of lemon zest ,3 eggs, 13/4 cup sugar, 1teaspoon of corn flour, put all ingredients in the blender for 10 seconds, then cook the curd on a low heat and add ½ stick of butter boil for 5 minutes.

My Pound Cake

Reviewed: Jan. 5, 2006
Wonderful, it is the recipe I have been looking for, my husband does not like cakes at all ,I made him taste this cake, and since then he asks me every week to bake him a pound cake. He even takes some to work with his lunch. My twist to this cake is that I used 1 cup of mild and 1/4 cup of fresh orange juice plus the zest on one orange. I sent the recipe to my friends, they all loved it, Thank you

Jam Filled Butter Cookies

Reviewed: Feb. 10, 2006
Jam Filled Cookies? they are better than jam filled cookies. I impressed my husband by making those for him for the valentine’s day, I gave them the heart shape, using the cutter, then I made the well after that, filled it with red jam, no powder sugar as some mentioned, they turned out perfectly, if you think the dough is so soft on you, add one or two more tablespoons n of flour it won't change the texture.

Coconut Cream Pie IV

Reviewed: Apr. 21, 2006
I Have never made or tasted a cocoanut pie, I made it for husband’s birthday, he LOVED it, the filling set up well, for those who had a problem with the filling, just cook it longer until it thickens, you can’t go wrong with ¼ cup of corn starch and 2 cups milk ratio. If I had to change something next time, that I would increase the amount of meringue.

Chewy Coconut Cookies

Reviewed: Aug. 25, 2006
I made these cookies for my husband, he loved them , I added ¼ cup of flour as some of you mentioned , but it was a mistake, it made the cookies hold their shapes as balls , not flat, so once I got them out of the oven while still soft I gently pressed each one with a spatula to flatten them. So they looked good, but next time I won’t add the extra four maybe only one tablespoon.

Honey Bun Cake I

Reviewed: Nov. 3, 2006
I would like to thank one of the reviewers “CaleyCat” for giving a substitute recipe for the cake mix. I followed her instructions, it came out perfect. I baked it in a bundt pan , added the filling into 2 layers, no need to swirl, it needs 60 minutes at 325 degrees, looks good, tastes wonderful.

Marble Swirl Pound Cake

Reviewed: Jun. 23, 2006
The look was fantasctic, but the taste was not to die for, next time, I would cut down the amount of flour to 2 3/4 cups only, because the flour ratio is big comparing to the to the other ingredients ratio. Just cut down the flour, and you can’t go wrong with it.
