Colleen's Slow Cooker Jambalaya
We made this for dinner this week and it was fantastic! Great flavor and super easy! We used Emeril's Creole seasoning for the Cajun seasoning and it worked out perfect. We added the chicken breasts whole and then shredded the chicken after it was all cooked which I prefer to cubed chicken. The only other change we made was using chicken sausage instead of traditional pork sausage and it was fantastic! Less calories too!

Chicken Marsala
Excellent!! We modified just a bit by sauteing a few diced shallots in the butter before adding the chicken. We also wanted to have more than enough sauce for our pasta too, so we doubled the wet ingredients (3/4 cup Marsala, 1/4 red cooking wine, 1/2 cup chicken broth) then we thickened it in the end with a little bit of corn starch. Super tasty!!

Peanut Butter Balls II
These were amazing!! Instead of cutting the chocolate with shortening we used only chocolate chips and they were such a huge hit! I made them for my Fiance's Thesis proposal and all the scientists, professors and grad students that attended raved about them afterwords!! They taste just like a giant Reese's PB cup!!
